Filipino Egg Rolls (Lumpia): Crispy, Savory, and Irresistibly Delicious
Filipino egg rolls, commonly known as lumpia, are one of those appetizers that can disappear from the table almost as quickly as they are served. Wrapped in thin, delicate wrappers and filled with a savory mixture of seasoned meat and finely chopped vegetables, lumpia are fried until beautifully crisp and golden.
Unlike thicker Chinese-style egg rolls, Filipino lumpia typically use very thin wrappers, which gives them their signature light, crackly texture. They are delicious as an appetizer, snack, party food, or part of a larger Filipino-inspired meal.
The filling can vary from family to family, but a classic version combines ground pork with carrots, onion, garlic, and seasonings. The ingredients are simple, yet the combination creates an incredibly flavorful filling.
Why You’ll Love These Filipino Egg Rolls
There is a lot to appreciate about homemade lumpia. The filling is flavorful without being complicated, and the thin wrapper becomes wonderfully crisp when fried.
They are also excellent for entertaining because you can prepare the rolls ahead of time and fry them shortly before serving. Once paired with a sweet chili sauce or a simple dipping sauce, they make an irresistible snack.
Another advantage is how customizable they are. You can adjust the vegetables, use a different ground meat, or make a vegetable-based version depending on what you have available.
Ingredients
For the Filling
- 1 pound ground pork
- 1 small onion, finely minced
- 3 cloves garlic, minced
- 1 medium carrot, finely grated or finely diced
- 1/2 cup finely chopped green cabbage
- 2 green onions, thinly sliced
- 1 tablespoon soy sauce
- 1 teaspoon oyster sauce
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt, or to taste
- 1 egg
For Wrapping and Frying
- 1 package thin lumpia or spring-roll wrappers
- 2 tablespoons water
- 1 tablespoon all-purpose flour
- Vegetable oil, for frying
For Serving
- Sweet chili sauce
- Banana ketchup
- Soy-vinegar dipping sauce
Step 1: Prepare the Vegetables
Start by preparing all of the vegetables before mixing the filling.
Finely mince the onion and garlic. Grate or very finely dice the carrot, then chop the cabbage into small pieces. Slice the green onions thinly.
Keeping the vegetables small is important. Large pieces can make the filling difficult to roll and may cause the wrapper to tear.
Step 2: Make the Lumpia Filling
Place the ground pork in a large mixing bowl.
Add the minced onion, garlic, carrot, cabbage, and green onions. Pour in the soy sauce and oyster sauce, then season with black pepper and salt.
Add the egg and mix everything together thoroughly.
Use clean hands or a sturdy spoon to combine the mixture until the ingredients are evenly distributed. Avoid overworking the meat more than necessary, as you want the finished filling to remain tender rather than dense.
Step 3: Prepare the Wrapper-Sealing Mixture
In a small bowl, combine the flour and water to make a simple paste.
This mixture will be used to seal the edges of each lumpia. You want it thick enough to act like glue but still easy to spread.
Keep the wrappers covered with a slightly damp kitchen towel while you work. Thin wrappers can dry out quickly, and dry wrappers are much more likely to crack while rolling.
