Roasted Cauliflower Steaks: A Golden, Flavorful Vegetable Main Dish
If you are looking for a simple way to turn cauliflower into something hearty, flavorful, and satisfying, roasted cauliflower steaks are a perfect choice. Thick slices of cauliflower are brushed with a savory seasoning mixture and roasted until the edges become beautifully browned and crisp while the center turns tender.
Despite the name, cauliflower steaks contain no meat. The term simply refers to the thick, steak-like slices cut from the center of a whole cauliflower. They are versatile enough to serve as a vegetarian main course, a side dish, or part of a larger dinner spread.
The best part is how little preparation they require. With a few pantry-friendly ingredients and a hot oven, ordinary cauliflower transforms into a deeply roasted dish with caramelized edges and plenty of flavor.
Why You’ll Love This Recipe
Roasted cauliflower steaks are:
- Easy to prepare with only a handful of ingredients
- Naturally vegetarian
- Crispy and caramelized around the edges
- Tender and flavorful in the center
- Flexible enough for different seasonings and toppings
- Perfect as a side dish or light main course
The key to getting delicious results is cutting the cauliflower thick enough to hold together and roasting it at a high temperature so it develops good color without becoming watery.
Ingredients
For about 4 cauliflower steaks, you will need:
- 1 large head of cauliflower
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon grated Parmesan cheese, optional
- 1 tablespoon fresh lemon juice
- Fresh parsley, for garnish
You can easily adjust the seasonings according to your taste. A pinch of chili flakes can add some heat, while a little cumin gives the cauliflower a warmer, more earthy flavor.
How to Make Roasted Cauliflower Steaks
Step 1: Prepare the Oven
Start by preheating your oven to 425°F (220°C).
Line a large baking sheet with parchment paper or lightly grease it with olive oil. Giving the oven plenty of time to heat up is important because the high temperature helps the cauliflower brown properly.
Step 2: Clean and Trim the Cauliflower
Remove the green leaves from the cauliflower, but do not cut away too much of the stem. The stem helps hold the slices together.
Rinse the cauliflower and pat it thoroughly dry. Excess moisture can prevent the surface from becoming nicely browned.
Place the cauliflower upright on a cutting board.
Step 3: Cut the Cauliflower Into Steaks
Using a sharp knife, cut the cauliflower vertically into slices approximately ¾ to 1 inch thick.
The center pieces will give you the best cauliflower steaks because they remain connected to the core. The outer florets will naturally break apart into smaller pieces.
Don’t throw those smaller pieces away. Arrange them around the steaks on the baking sheet and roast them alongside the steaks.
Step 4: Make the Seasoning Mixture
In a small bowl, combine the olive oil, garlic powder, smoked paprika, onion powder, oregano, salt, and black pepper.
Mix everything until the spices are evenly distributed throughout the oil.
The olive oil helps the seasoning stick to the cauliflower while also encouraging browning during roasting.
Step 5: Season the Cauliflower
Place the cauliflower steaks on the prepared baking sheet in a single layer.
Brush the tops generously with the seasoned olive oil. Carefully turn each steak over and brush the other side as well.
Try to coat the edges too. Those edges are where some of the best caramelization develops.
If you are using Parmesan, sprinkle a little over the steaks at this stage or save it for later in the roasting process.
Step 6: Begin Roasting
Place the baking sheet in the preheated oven and roast the cauliflower for approximately 20 minutes.
Avoid moving the steaks around during the first part of roasting. Keeping them in contact with the hot baking sheet helps create a browned, flavorful surface.
