Chicken and Dumplings: A Cozy Homemade Classic
There are few meals as comforting as a steaming bowl of chicken and dumplings. Tender pieces of chicken, hearty vegetables, and fluffy dumplings come together in a rich, savory broth that feels like the kind of meal you would find waiting for you at a family dinner table.
The best part is that this dish doesn’t require complicated ingredients or fancy techniques. With a little patience, you can turn simple pantry staples into a satisfying one-pot meal that’s perfect for a chilly evening, a Sunday dinner, or whenever you’re craving something warm and homemade.
Why You’ll Love This Chicken and Dumplings Recipe
This recipe is designed to create a flavorful broth without making the process unnecessarily complicated. The chicken is gently cooked until tender, while onions, carrots, and celery build a classic savory base.
The dumplings are added near the end so they can steam directly over the bubbling chicken broth. They become soft and fluffy on top while absorbing some of that delicious flavor underneath.
It’s hearty enough to serve as a complete meal, and leftovers can be even more flavorful the next day.
Ingredients
For the Chicken and Broth
- 2 pounds boneless, skinless chicken thighs or chicken breasts
- 2 tablespoons butter or olive oil
- 1 medium yellow onion, finely chopped
- 2 celery stalks, sliced
- 2 medium carrots, peeled and sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried sage
- 1 bay leaf
- 1 teaspoon salt, or to taste
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup heavy cream or whole milk
- 2 tablespoons all-purpose flour
For the Dumplings
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons cold butter
- 3/4 cup whole milk
- 1 tablespoon chopped fresh parsley, optional
Step-by-Step Method
Step 1: Prepare the Chicken
Pat the chicken dry with paper towels and season both sides lightly with salt and black pepper.
Heat a large heavy-bottomed pot or Dutch oven over medium heat. Add the butter or olive oil.
Place the chicken into the pot and cook for approximately 3–4 minutes per side, just until it develops some color. It doesn’t need to be completely cooked at this stage because it will finish cooking in the broth.
Transfer the chicken to a plate and set it aside.
Step 2: Build the Vegetable Base
Using the same pot, add the chopped onion, celery, and carrots.
Cook for about 5–7 minutes, stirring occasionally, until the vegetables begin to soften. The vegetables will pick up the flavorful browned bits left behind by the chicken.
Add the minced garlic and cook for another 30–60 seconds, just until fragrant.
Step 3: Make the Creamy Broth
Sprinkle the flour over the vegetables and stir continuously for about 1 minute. This helps cook out the raw flour taste and will eventually give the broth a slightly thicker texture.
Slowly pour in the chicken broth while stirring. Continue stirring until the flour is incorporated and there are no obvious lumps.
Add the thyme, rosemary, sage, bay leaf, remaining salt, and black pepper.
Step 4: Return the Chicken to the Pot
Place the chicken back into the broth.
Bring the mixture to a gentle simmer, then reduce the heat to medium-low. Cover the pot partially and let everything cook for approximately 20–25 minutes, or until the chicken is fully cooked and tender.
The exact cooking time will depend on the size and thickness of the chicken pieces.
Step 5: Shred the Chicken
Carefully remove the cooked chicken from the pot and place it on a clean plate or cutting board.
Once it is cool enough to handle, shred it into bite-sized pieces using two forks.
Return the shredded chicken to the pot.
At this point, taste the broth and adjust the salt and pepper if necessary.
