Cheesy Ground Beef and Sliced Potato Casserole Bake

Few meals are as comforting as a bubbling casserole fresh from the oven, and this Cheesy Ground Beef and Sliced Potato Casserole Bake is exactly the kind of dish that makes everyone hurry to the dinner table. Tender layers of thinly sliced potatoes are paired with savory seasoned ground beef, creamy sauce, and plenty of melted cheese for a hearty meal with familiar, satisfying flavors.

What makes this casserole especially appealing is how simple the ingredients are. You do not need anything complicated or expensive—just potatoes, ground beef, cheese, a few vegetables, seasonings, and a creamy sauce. As everything bakes together, the potatoes absorb the flavorful juices from the beef while the cheese melts into a golden, bubbling topping.

It is an excellent choice for a busy weeknight, a cozy Sunday dinner, or whenever you want a filling meal that can feed the whole family.

Why You’ll Love This Casserole

This recipe brings together several textures in every bite. The potatoes become soft and tender, the ground beef stays savory and flavorful, and the cheese creates a rich, melty layer across the top.

It is also easy to customize. You can add vegetables, change the cheese, adjust the seasonings, or make the sauce richer depending on what you already have in your kitchen.

Another advantage is that most of the preparation happens before the casserole goes into the oven. Once it is assembled, the oven does most of the work.

Ingredients

For approximately 6 servings, you will need:

  • 1 ½ pounds ground beef
  • 5–6 medium potatoes, peeled and thinly sliced
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt, divided
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 tablespoons chopped fresh parsley, optional

Step 1: Prepare the Potatoes

Begin by preheating your oven to 375°F (190°C).

Peel the potatoes and rinse them well. Slice them into thin, fairly even rounds. Aim for slices about ⅛ inch thick so they cook evenly.

Try not to make some slices very thick and others extremely thin. Uniform slices help the entire casserole finish cooking at approximately the same time.

Place the sliced potatoes in a bowl and lightly season them with about half of the salt, along with the black pepper and paprika. Toss gently to distribute the seasonings.

Step 2: Brown the Ground Beef

Heat the olive oil in a large skillet over medium heat.

Add the diced onion and cook for approximately 2–3 minutes, until it begins to soften. Add the minced garlic and cook for another 30 seconds, stirring frequently.

Add the ground beef to the skillet. Break it apart with a wooden spoon and cook until browned and no longer pink.

Season the beef with the remaining salt, garlic powder, onion powder, and dried oregano.

Once the beef is cooked, carefully drain off excess grease if necessary. Return the skillet to low heat for another minute so the seasonings can fully coat the meat.

Step 3: Make the Creamy Sauce

In a medium bowl, combine the condensed cream of mushroom soup and milk.

Whisk until the mixture becomes smooth and pourable.

If you prefer a stronger cheese flavor, you can stir a small handful of shredded cheddar into the sauce as well. This creates an even creamier layer between the potatoes and beef.
