Ingredients
For approximately 4–6 servings, you’ll need:
- 1 pound Italian sausage, mild or hot
- 12 ounces penne, rigatoni, or another short pasta
- 1 tablespoon olive oil
- 1 medium yellow onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- ½ teaspoon red pepper flakes, optional
- 1 can (14–15 ounces) diced tomatoes
- 1 can (8 ounces) tomato sauce
- ½ cup chicken broth or reserved pasta water
- ½ cup freshly grated Parmesan cheese
- Salt and black pepper, to taste
- 2 tablespoons chopped fresh parsley or basil
- Extra Parmesan, for serving
Step 1: Cook the Pasta
Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until it is al dente.
Before draining, reserve about ½ cup of the pasta water. The starchy water can be used later to loosen the sauce and help it cling to the pasta.
Drain the pasta and set it aside. There is no need to rinse it because the natural starch on the surface helps the sauce stick.
Step 2: Brown the Italian Sausage
Place a large, deep skillet over medium-high heat and add the olive oil.
Remove the sausage from its casings if necessary and add it to the skillet. Break it apart with a wooden spoon or spatula as it cooks.
Cook for approximately 5–7 minutes, stirring occasionally, until the sausage is browned and cooked through.
Don’t rush this step. Allowing the sausage to develop some golden-brown edges creates flavorful bits on the bottom of the skillet that will become part of the sauce.
If there is an excessive amount of grease in the pan, carefully drain some of it while leaving a little behind for flavor.
Step 3: Sauté the Onions and Peppers
Add the sliced onion and bell peppers directly to the skillet with the sausage.
Cook for about 6–8 minutes, stirring occasionally. The vegetables should begin to soften while still retaining a little texture.
As they cook, scrape the bottom of the skillet with your spoon to loosen any browned sausage pieces.
The onions will become slightly sweet as they soften, while the peppers will develop a wonderful roasted flavor.
