Ingredients

For the Cake

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup sour cream
  • 1 tablespoon milk, if needed
  • 1 cup fresh or frozen raspberries

For the Cream Cheese Filling

  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

For the Crumb Topping

  • 1/2 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 1/4 teaspoon cinnamon
  • Pinch of salt

Optional Glaze

  • 1/2 cup powdered sugar
  • 1–2 tablespoons milk or heavy cream
  • 1/4 teaspoon vanilla extract

How to Make Raspberry Cream Cheese Coffee Cake

Step 1: Prepare the Oven and Pan

Preheat your oven to 350°F (175°C). Grease a 9-inch round springform pan or a 9-inch square baking pan. For easier removal, line the bottom with parchment paper and lightly grease the sides.

If you’re using frozen raspberries, there is no need to completely thaw them. Keeping them cold helps prevent excess moisture from spreading throughout the batter.

Step 2: Make the Cream Cheese Filling

Place the softened cream cheese in a medium bowl. Beat it until smooth and creamy.

Add the sugar, egg yolk, vanilla extract, and flour. Mix until everything is fully combined and the filling is smooth.

Set the cream cheese mixture aside while you prepare the cake batter.

Step 3: Prepare the Dry Ingredients

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Mixing the dry ingredients separately helps distribute the leavening agents evenly, giving the cake a consistent rise.

Step 4: Cream the Butter and Sugar

In a large mixing bowl, beat the softened butter and granulated sugar together for about 2–3 minutes.

The mixture should become noticeably lighter and fluffy. This step helps create a tender cake texture, so avoid rushing it.
