No-Bake Lemon Icebox Pie in a Graham Cracker Crust

There is something wonderfully nostalgic about a chilled lemon icebox pie. Bright, creamy, tangy, and refreshingly cold, this No-Bake Lemon Icebox Pie in a Graham Cracker Crust is the kind of dessert that feels special without requiring much work. There is no oven involved, and the filling comes together with just a handful of simple ingredients.

The secret is allowing the pie enough time to chill. As it rests in the refrigerator, the lemon filling firms up into a smooth, sliceable texture while the citrus flavor becomes even more refreshing. The buttery graham cracker crust adds just the right amount of crunch and sweetness to balance the tart lemon filling.

Why You’ll Love This Lemon Icebox Pie

This pie is ideal when you want a homemade dessert without turning on the oven. It is especially convenient for warm days, holidays, family gatherings, potlucks, or whenever you need a dessert that can be prepared ahead of time.

The combination of creamy filling, fresh lemon juice, and crisp graham cracker crumbs creates a classic sweet-and-tart flavor. You can also prepare the entire pie several hours before serving, giving you less to do when it is time for dessert.

Ingredients

For the Graham Cracker Crust

  • 1 ½ cups finely crushed graham crackers
  • 6 tablespoons unsalted butter, melted
  • 3 tablespoons granulated sugar
  • Pinch of salt

For the Lemon Filling

  • 1 can (14 ounces) sweetened condensed milk
  • ¾ cup fresh lemon juice
  • 1 tablespoon finely grated lemon zest
  • 1 cup heavy whipping cream, cold
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

Optional Toppings

  • Lemon slices or small lemon wedges
  • Extra lemon zest
  • Whipped cream
  • A few thin graham cracker crumbs
  • Fresh berries for serving

Step 1: Prepare the Graham Cracker Crust

Begin by crushing the graham crackers into very fine crumbs. You can use a food processor or place the crackers in a sealed bag and crush them with a rolling pin.

Transfer the crumbs to a bowl and add the granulated sugar and a small pinch of salt. Stir everything together until evenly combined.

Pour in the melted butter and mix thoroughly. The crumbs should resemble wet sand and hold together when pressed between your fingers.

Transfer the mixture to a 9-inch pie dish. Using the bottom of a measuring cup or a flat glass, firmly press the crumbs across the bottom of the dish and slightly up the sides.

Since this is a no-bake pie, the crust does not need to go into the oven. Place it in the refrigerator while preparing the filling so it can firm up.

Step 2: Make the Lemon Mixture

Pour the sweetened condensed milk into a large mixing bowl.

Add the fresh lemon juice and finely grated lemon zest. Whisk until the mixture is smooth and well combined.

As the lemon juice combines with the sweetened condensed milk, the mixture will gradually become thicker. Freshly squeezed lemon juice gives the pie a much brighter flavor than bottled juice, so it is worth using fresh lemons whenever possible.

Stir in the vanilla extract.
