Crispy Hash Brown Potato Pie
If you love the golden crunch of perfectly cooked hash browns and the comforting richness of a homemade savory pie, this Crispy Hash Brown Potato Pie brings both together in one irresistible dish. Instead of using a traditional pastry crust, shredded potatoes are transformed into a beautifully crisp, golden shell that holds a creamy, cheesy filling.
It is hearty enough for breakfast or brunch, but it also makes a wonderful easy dinner served alongside a fresh salad or roasted vegetables. The best part is the contrast between the crunchy potato edges and the soft, flavorful center.
Why You’ll Love This Recipe
This potato pie is simple enough for a weeknight meal but impressive enough to serve to guests. The hash brown crust adds much more flavor and texture than a standard pastry crust, while the creamy filling can easily be customized with your favorite ingredients.
The secret to getting that deliciously crispy crust is removing as much moisture as possible from the potatoes before baking. Wet potatoes will steam instead of becoming crisp, so taking a few extra minutes to squeeze them dry makes a huge difference.

Step 1: Prepare the Hash Browns
Begin by thawing the frozen hash browns completely. Place them in a clean kitchen towel or several layers of paper towels and squeeze firmly to remove as much water as possible.
This step is extremely important. Excess moisture prevents the potatoes from becoming crispy and can leave the bottom of the pie soft.
Once the potatoes are dry, transfer them to a large bowl.
Add the melted butter, olive oil, salt, black pepper, and garlic powder. Toss everything together until the potatoes are evenly coated.
Step 2: Form the Potato Crust
Preheat your oven to 400°F (200°C).
Lightly grease a 9-inch pie dish with cooking spray or butter.
Pour the seasoned hash browns into the dish. Using your fingers or the back of a spoon, press the potatoes firmly across the bottom and up the sides of the dish.
Try to create an even layer. The sides should be slightly thicker than the bottom so the crust remains sturdy after baking.
Make sure there are no large gaps in the potato layer.
Step 3: Pre-Bake the Crust
Place the potato crust in the preheated oven and bake for approximately 25–30 minutes.
The potatoes should begin turning golden brown around the edges.
For an especially crispy crust, carefully press down any areas that puff up during baking and return the crust to the oven for another 5–10 minutes.
The goal is to have a partially baked crust before adding the filling. This helps prevent the egg mixture from making the potatoes soggy.
