Step-by-Step Method

1. Prepare the Oven and Pan

Preheat your oven to 350°F (175°C).

Grease a standard 9-by-5-inch loaf pan and line it with parchment paper, leaving some parchment hanging over the long sides. This makes it much easier to lift the finished cake from the pan.

If your loaf pan is slightly smaller, keep an eye on the cake while baking because the batter may need a few extra minutes.

2. Prepare the Pistachios

Place the shelled pistachios in a food processor and pulse several times until they become finely ground.

Be careful not to process them continuously for too long. Pistachios contain natural oils, and excessive processing can turn them into pistachio butter.

Measure out about ½ cup of the finely ground pistachios for the batter. Reserve the remaining pistachios for decorating if desired.

3. Combine the Dry Ingredients

In a medium bowl, whisk together:

  • All-purpose flour
  • Ground pistachios
  • Baking powder
  • Baking soda
  • Salt
