Apple Fritter Bread: A Cozy, Cinnamon-Swirled Loaf with Fresh Apples

Apple Fritter Bread brings together everything wonderful about a classic apple fritter in an easy-to-slice loaf. Tender vanilla bread is layered with juicy cinnamon-coated apples, then finished with a sweet glaze that sinks into the warm surface. The result is a comforting homemade treat with crisp apple flavor, warm spices, and just enough sweetness.

It is especially delicious in the fall, but there is no reason to save it for apple season. Serve a slice with coffee for breakfast, enjoy it as an afternoon snack, or warm it slightly for a simple dessert.

Ingredients

For the Apple Filling

  • 2 medium apples, peeled, cored, and diced into small pieces
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon lemon juice

For the Bread

  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk

For the Cinnamon Sugar Layer

  • ⅓ cup light brown sugar
  • 1 teaspoon ground cinnamon

For the Glaze

  • ½ cup powdered sugar
  • 1–2 tablespoons milk
  • ½ teaspoon vanilla extract

Step-by-Step Method

1. Prepare the Apples

Start by peeling and coring the apples. Cut them into small, bite-sized pieces so they distribute evenly throughout the loaf.

Place the apples in a bowl and toss them with the granulated sugar, cinnamon, and lemon juice. The lemon juice adds a subtle brightness while also complementing the sweetness of the apples.

Set the mixture aside while you prepare the batter.

Tip: Apples such as Granny Smith, Honeycrisp, or Pink Lady work particularly well because they hold their shape during baking.

2. Prepare the Oven and Pan

Preheat your oven to 350°F (175°C).

Grease a standard 9 × 5-inch loaf pan and line it with parchment paper, leaving some parchment hanging over the sides. This makes the finished loaf much easier to lift from the pan.

3. Cream the Butter and Sugar

In a large mixing bowl, beat the softened butter and granulated sugar until the mixture becomes light and fluffy.

This step helps create a tender texture, so don’t rush it. Scrape down the sides of the bowl if necessary.
