Cheesy French Onion Cauliflower Bake
If you love the rich, savory flavor of French onion soup and the irresistible comfort of a bubbling cheesy casserole, this Cheesy French Onion Cauliflower Bake brings both together in one delicious dish. Tender roasted cauliflower is coated in a creamy, onion-infused sauce, layered with deeply caramelized onions, and finished with plenty of melted cheese.
It is cozy enough for a family dinner, impressive enough for a holiday table, and satisfying enough to serve as a meatless main course. The cauliflower absorbs the savory sauce beautifully while the caramelized onions add a naturally sweet, almost jammy flavor that balances the richness of the cheese.
Why You’ll Love This Cauliflower Bake
The secret to making this casserole especially flavorful is giving the onions enough time to caramelize. Instead of simply sautéing them until soft, they are slowly cooked until golden brown and deeply savory. This creates the signature French onion flavor.
Roasting the cauliflower before assembling the casserole is another important step. It removes excess moisture and gives the florets lightly browned edges, preventing the finished bake from becoming watery.
The result is a casserole with tender cauliflower, silky sauce, sweet caramelized onions, and a golden, bubbling cheese topping.
Ingredients
For the Cauliflower
- 1 large head cauliflower, cut into bite-sized florets
- 2 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
For the Caramelized Onions
- 2 large yellow onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- ½ teaspoon salt
- 1 teaspoon brown sugar, optional
- 1 teaspoon fresh thyme leaves
- 2 cloves garlic, minced
For the Creamy Sauce
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1½ cups whole milk
- ½ cup beef or vegetable broth
- ½ teaspoon Dijon mustard
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- ½ cup sour cream or cream cheese
For the Cheese Topping
- 1 cup shredded Gruyère cheese
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- Fresh thyme or chopped parsley, for garnish
Step-by-Step Method
1. Prepare the Cauliflower
Preheat your oven to 425°F (220°C).
Wash the cauliflower and cut it into evenly sized florets. Try not to make the pieces too small because they will shrink slightly as they roast.
Place the florets on a large baking sheet. Drizzle with olive oil and sprinkle with salt, black pepper, and garlic powder. Toss thoroughly so every piece is lightly coated.
Spread the cauliflower into a single layer.
Roast for approximately 20–25 minutes, turning once halfway through, until the edges are golden brown and the cauliflower is tender but not mushy.
Remove from the oven and set aside.
2. Slowly Caramelize the Onions
While the cauliflower roasts, begin preparing the onions.
Melt the butter with the olive oil in a large skillet over medium-low heat. Add the sliced onions and sprinkle them with salt.
Cook the onions slowly for approximately 25–35 minutes, stirring every few minutes.
At first, the onions will become soft and translucent. As they continue cooking, they will gradually turn golden brown and develop a deep, sweet flavor.
If the onions begin sticking to the bottom of the pan, add a tablespoon of water or broth and scrape up the browned bits.
Once the onions are deeply golden and caramelized, add the minced garlic and thyme. Cook for another minute.
If you want a slightly sweeter French onion flavor, stir in the brown sugar during the final few minutes of cooking.
Remove the skillet from the heat.
3. Make the Creamy Sauce
In a saucepan, melt the butter over medium heat.
Whisk in the flour and cook for about 1 minute, stirring constantly. This creates a simple roux that will thicken the sauce.
Slowly pour in the milk while whisking continuously to prevent lumps.
Add the broth, Dijon mustard, garlic powder, and black pepper.
Continue cooking for several minutes until the sauce thickens enough to coat the back of a spoon.
Reduce the heat to low and stir in the sour cream or cream cheese. Continue stirring until completely smooth.
Taste the sauce and adjust the seasoning if necessary.
