Crispy Baked Cheese Sticks

Golden, crunchy on the outside and wonderfully cheesy in the center, these Crispy Baked Cheese Sticks are an easy homemade snack that feels like a treat without requiring a deep fryer. They are perfect for an afternoon snack, party appetizer, game-day spread, or a simple side dish for pasta and soup.

The best part is the contrast in texture: the coating becomes beautifully crisp in the oven while the cheese inside turns warm, soft, and irresistibly gooey. A little Italian seasoning and garlic add extra flavor without overpowering the cheese.

Ingredients

  • 12 mozzarella string cheese sticks
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • 1½ cups Italian-style breadcrumbs
  • ½ cup finely grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Cooking spray or a small amount of olive oil
  • Marinara sauce, for serving

Step 1: Prepare the Cheese

Unwrap the mozzarella sticks and pat them dry with paper towels. This small step is important because excess moisture can make the coating less likely to stick.

Place the cheese sticks on a plate or tray and put them in the freezer for about 30–45 minutes. You do not want them frozen solid; the goal is simply to make them very cold and firm.

Chilling the cheese helps slow down the melting process once the sticks go into the hot oven.

Step 2: Set Up the Coating Station

Prepare three shallow bowls.

In the first bowl, add the flour.

In the second bowl, whisk together the eggs and milk until smooth.

In the third bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, paprika, salt, and black pepper.

Mix the breadcrumb mixture thoroughly so the seasonings and Parmesan are distributed evenly.

Step 3: Coat the Cheese Sticks

Take one chilled mozzarella stick and roll it through the flour, making sure it is lightly covered on all sides.

Next, dip it into the egg mixture. Let any excess egg drip back into the bowl.

Finally, roll the cheese stick through the seasoned breadcrumbs. Gently press the crumbs onto the surface so they adhere well.

For an extra-crispy coating, repeat the egg and breadcrumb steps a second time. This creates a thicker protective layer around the cheese and helps prevent it from leaking during baking.

Place each coated cheese stick on a parchment-lined baking sheet.
