
Oven-Baked BBQ Beef Brisket

When it is slowly baked in the oven with a flavorful barbecue seasoning and a generous coating of smoky-sweet BBQ sauce, the result is tender, juicy meat with deeply caramelized edges and plenty of rich flavor. You do not need a smoker or outdoor grill to make an impressive brisket at home—the oven can do the job beautifully with the right temperature, seasoning, and cooking time.
This Oven-Baked BBQ Beef Brisket is designed for slow cooking, allowing the tough connective tissue in the beef to gradually soften while the flavors develop. The finished brisket can be sliced for a family dinner, piled onto sandwiches, or served alongside classic barbecue sides.
Why This Brisket Works
The secret is patience. Brisket contains a lot of connective tissue, so cooking it quickly can leave the meat chewy. Baking it slowly at a low temperature gives the collagen time to break down and keeps the meat moist.

- 4–5 pounds beef brisket

- 1½ teaspoons garlic powder
- 1½ teaspoons onion powder
- 1 teaspoon freshly ground black pepper
- 1 teaspoon chili powder
- 1 teaspoon brown sugar
- ½ teaspoon cumin
For the BBQ Cooking Sauce
- 1½ cups BBQ sauce
- ½ cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon brown sugar
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
Step 1: Prepare the Brisket
Remove the brisket from the refrigerator and pat it thoroughly dry with paper towels. Keeping the surface dry helps the mustard and seasoning adhere properly.
Trim away any thick, hard pieces of fat from the brisket. Leave a thin layer of fat because it can help protect the meat and contribute flavor as it cooks.
If the brisket has a very thick fat cap, trim it down to roughly ¼ inch.
Step 2: Make the Dry Rub
In a small bowl, combine the salt, smoked paprika, garlic powder, onion powder, black pepper, chili powder, brown sugar, and cumin.
Mix everything thoroughly so the spices are evenly distributed.
The combination of smoked paprika, black pepper, garlic, and brown sugar gives the brisket a balanced flavor: smoky, savory, slightly sweet, and mildly spicy.
Step 3: Season the Beef
Rub the olive oil over the brisket, followed by a thin layer of yellow mustard.
Do not worry about the mustard making the brisket taste strongly of mustard. During the long cooking process, its sharpness mellows considerably, while it helps the seasoning stick to the meat and contributes another layer of flavor.
Sprinkle the dry rub generously over every surface of the brisket. Press the seasoning into the meat rather than simply brushing it off.
For even better flavor, cover the seasoned brisket and refrigerate it for several hours or overnight. If you are short on time, you can cook it immediately.
Step 4: Prepare the BBQ Sauce Mixture
In a bowl, whisk together the BBQ sauce, beef broth, Worcestershire sauce, apple cider vinegar, brown sugar, smoked paprika, and garlic powder.
The beef broth helps create moisture during the covered cooking stage, while Worcestershire sauce adds savory depth. Apple cider vinegar provides a little acidity to balance the sweetness of the BBQ sauce.
