
Classic Shepherd’s Pie
There are few comfort foods as satisfying as a bubbling dish of Classic Shepherd’s Pie. It combines a savory, richly seasoned lamb filling with tender vegetables and a creamy layer of mashed potatoes that turns beautifully golden in the oven. Every spoonful brings together hearty meat, sweet vegetables, flavorful gravy, and buttery potatoes.
This traditional-style version is simple enough for a cozy weeknight dinner but comforting enough to serve when family and friends gather around the table. The secret is building flavor in each layer rather than simply mixing everything together.
Ingredients
For the Mashed Potato Topping
- 2 pounds russet or Yukon Gold potatoes, peeled and cut into chunks
- 4 tablespoons unsalted butter
- ½ cup whole milk, warmed
- ¼ cup sour cream, optional
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup shredded cheddar cheese, optional
For the Lamb Filling
- 1½ pounds ground lamb
- 1 medium yellow onion, finely diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons all-purpose flour
- 1½ cups beef or lamb broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- ½ teaspoon dried rosemary
- ½ teaspoon salt, plus more to taste
- ¼ teaspoon black pepper
- 1 cup frozen peas
- 1 tablespoon olive oil, if needed
Step-by-Step Method
1. Prepare the Potatoes
Place the peeled potato chunks in a large pot and cover them with cold water. Add a generous pinch of salt.
Bring the water to a boil, then reduce the heat slightly and cook the potatoes for about 15–20 minutes, or until they are completely tender when pierced with a fork.
Drain them thoroughly and let them sit in the warm pot for a minute or two. This allows excess moisture to evaporate and helps create a richer, creamier mash.
Add the butter and mash the potatoes until mostly smooth. Slowly add the warm milk, stirring until the potatoes become creamy. Mix in the sour cream if using, then season with salt and black pepper.
For an especially indulgent topping, stir in the shredded cheddar cheese. Set the mashed potatoes aside while you prepare the filling.
2. Brown the Lamb
Preheat your oven to 400°F (200°C).
Heat a large oven-safe skillet over medium-high heat. Add the ground lamb and cook for about 6–8 minutes, breaking it apart with a wooden spoon as it browns.
The lamb should develop some caramelized, browned edges. This step is important because those browned bits add much more flavor to the finished pie.
If there is an excessive amount of rendered fat, carefully drain some of it, leaving enough to cook the vegetables.
3. Cook the Vegetables
Add the diced onion, carrots, and celery to the skillet. Cook for approximately 5–7 minutes, stirring occasionally, until the vegetables begin to soften.
Add the minced garlic and cook for another 30–60 seconds, just until fragrant.
Avoid browning the garlic too much, as it can become bitter.
