
Oven-Baked BBQ Beef Brisket
Few dishes are as satisfying as a beautifully cooked beef brisket. When it is seasoned with a smoky spice rub, coated with tangy BBQ sauce, and slowly baked in the oven, an ordinary cut of beef transforms into something incredibly tender, juicy, and full of deep barbecue flavor. The best part is that you do not need a smoker or outdoor grill to make it—your oven can produce an impressive brisket with plenty of time and a little patience.
Why Oven-Baked Brisket Works
Brisket is a naturally tough cut because it comes from muscles that get a lot of use. Cooking it slowly at a low temperature gives the connective tissue enough time to break down. The result is meat that can be sliced easily and remains wonderfully juicy.
A combination of a flavorful dry rub, a little liquid in the baking dish, and BBQ sauce helps create layers of flavor. Covering the brisket during most of the cooking keeps the environment moist, while uncovering it near the end allows the sauce to become sticky and caramelized.
Ingredients
For the brisket:
- 4–5 pounds beef brisket, preferably flat or point cut
- 2 tablespoons olive oil
- 2 tablespoons brown sugar
- 1 tablespoon smoked paprika
- 1 tablespoon paprika
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons kosher salt
- 1½ teaspoons black pepper
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
For the baking liquid:
- 1 cup beef broth
- ½ cup BBQ sauce
- 2 tablespoons apple cider vinegar
- 1 tablespoon Worcestershire sauce
For finishing:
- 1 to 1½ cups your favorite BBQ sauce
- Optional: sliced green onions or fresh parsley for serving
Step-by-Step Method
1. Prepare the Brisket
Take the brisket out of the refrigerator about 30–45 minutes before cooking. Pat the surface thoroughly dry with paper towels.
Look over the brisket and trim away any very thick or hard pieces of fat. Leave a thin layer of fat behind because it can help keep the meat moist and flavorful as it cooks.
If your brisket has a particularly thick fat cap, trim it down to roughly ¼ inch.
2. Make the Dry Rub
In a small bowl, combine the brown sugar, smoked paprika, paprika, garlic powder, onion powder, salt, black pepper, chili powder, and cumin.
Mix everything thoroughly so the spices are evenly distributed.
Rub the brisket lightly with olive oil, then generously coat every surface with the seasoning mixture. Press the rub into the meat rather than simply sprinkling it over the top.
For even better flavor, cover the seasoned brisket and refrigerate it for at least 2 hours. If you have time, leaving it overnight allows the seasoning to penetrate more deeply.
