For approximately 4–6 servings, gather:

  • 6 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt, or to taste
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon dried thyme
  • 2 cloves garlic, finely minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard, optional
  • Fresh parsley for garnish, optional

The seasoning can easily be adjusted according to your preferences. For a spicier version, add a pinch of cayenne pepper or red pepper flakes.

Step 1: Prepare the Chicken

Begin by removing the chicken thighs from their packaging. Pat each piece thoroughly with paper towels.

This step may seem minor, but it is important. Removing excess moisture from the surface helps the skin brown more effectively in the oven. Wet chicken tends to steam rather than roast, making it more difficult to achieve a crisp exterior.

Inspect the thighs and trim away any large pieces of excess skin or visible fat if desired. Do not remove all of the fat, because some of it contributes flavor and helps keep the meat moist during cooking.

Place the prepared chicken thighs on a clean plate or tray.

Step 2: Prepare the Seasoning Mixture

In a small bowl, combine the olive oil, garlic powder, paprika, onion powder, Italian seasoning, smoked paprika, salt, black pepper, thyme, minced garlic, lemon juice, and Dijon mustard if using.

Mix everything together until you have a thick, aromatic seasoning paste.

The olive oil helps the seasonings adhere to the chicken while also encouraging better browning. The combination of garlic, paprika, herbs, and mustard gives the chicken a savory flavor with a subtle tang.

If you prefer a simpler seasoning blend, you can omit the mustard and lemon juice and use only the dry spices with olive oil.

Step 3: Season the Chicken Thoroughly

Place the chicken thighs in a large bowl or on a tray.

Rub the seasoning mixture generously over each piece, making sure to coat the top and sides.

If you are using skin-on thighs, gently loosen the skin from the meat without completely removing it. Rub a small amount of seasoning underneath the skin as well. This allows the flavor to penetrate closer to the meat while the skin remains exposed for browning.

Try to distribute the seasoning evenly so every piece has a flavorful coating.

For an even deeper flavor, cover the seasoned chicken and refrigerate it for 30 minutes to several hours before baking. If you have time, allowing the seasoning to sit gives the herbs and spices more opportunity to flavor the meat.
