How to Make Cheesy Broccoli Noodle Casserole

Set the noodles aside.

Step 3: Blanch the Broccoli

While the noodles are cooking, bring another pot of water to a gentle boil or use the same pot after removing the noodles.

Add the broccoli florets and cook for approximately 2–3 minutes, just until they become bright green and slightly tender.

Drain the broccoli immediately.

You want the broccoli to retain some firmness because it will cook again in the oven. Overcooking it at this stage can result in soft, watery vegetables in the finished casserole.

For an even easier method, you can steam the broccoli instead.

Step 4: Prepare the Creamy Cheese Sauce

Melt the butter in a large saucepan over medium heat.

Add the minced garlic and cook for about 30 seconds, stirring constantly. The garlic should become fragrant without turning brown.

Add the condensed cream of mushroom soup, sour cream, and milk.

Whisk everything together until the mixture becomes smooth.

Add the Dijon mustard, onion powder, garlic powder, paprika, salt, and black pepper.

Continue cooking over medium-low heat for approximately 3–4 minutes, stirring frequently.

The mixture should become warm and creamy, but there is no need to bring it to a vigorous boil.

Step 5: Add the Cheese

Reduce the heat to low.

Add 1½ cups of the shredded cheddar cheese, along with the mozzarella and Parmesan.
