
Cheesy Sloppy Joe English Muffin Melts

They combine seasoned ground beef simmered in a rich, tangy sauce with toasted English muffins and a generous layer of melted cheese.
The English muffins provide crisp, golden edges while staying pleasantly chewy in the center. Once topped with the saucy beef and cheese, they become a satisfying open-faced meal that works equally well for a casual family dinner, an easy lunch, or a game-day snack.

Ingredients
For the Sloppy Joe Filling
- 1 pound ground beef
- 1 tablespoon olive oil, if needed
- 1/2 medium yellow onion, finely diced
- 1 small green bell pepper, finely diced
- 2 cloves garlic, minced
- 3/4 cup tomato sauce
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown sugar
- 1 teaspoon yellow mustard
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2–3 tablespoons water, as needed
For the Melts
- 4 English muffins, split in half
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon melted butter
- 1/2 teaspoon garlic powder
- 1 tablespoon chopped fresh parsley, optional
Step 1: Prepare the Vegetables
Start by finely dicing the onion and green bell pepper. Keeping the vegetables small allows them to soften quickly and blend naturally into the Sloppy Joe filling rather than creating large pieces that fall off the English muffins.
Mince the garlic and set all the vegetables aside.
Step 2: Brown the Ground Beef
Heat a large skillet over medium-high heat. Add the ground beef and cook for approximately 5–7 minutes, breaking it apart with a wooden spoon or spatula as it cooks.
Continue until the beef is browned and no longer pink.
If there is a large amount of excess grease in the skillet, carefully drain it before continuing. Leaving a small amount of fat behind can add flavor, but too much will make the melts greasy.
Step 3: Cook the Onion and Pepper
Add the diced onion and bell pepper to the browned beef. Cook for about 3–4 minutes, stirring occasionally, until the vegetables begin to soften.
Add the minced garlic and cook for another 30–60 seconds, just until fragrant. Avoid cooking the garlic for too long because it can become bitter.
