Slow Cooker Whole Roast Chicken

There is something wonderfully comforting about a whole roast chicken, especially when it comes out of the kitchen tender, juicy, and full of savory flavor. The best part is that you don’t need to spend hours standing over the stove or constantly checking the oven. With a slow cooker, a few simple seasonings, and a whole chicken, you can create a satisfying family dinner with surprisingly little effort.

This Slow Cooker Whole Roast Chicken is seasoned with fragrant herbs, garlic, onion, and a touch of paprika before being cooked gently until the meat becomes incredibly tender. The slow cooker traps moisture as the chicken cooks, helping the meat stay juicy while the seasonings slowly work their way into every bite.

While the skin will not become as crisp in the slow cooker as it would in a traditional oven roast, there is an easy finishing step that gives it a beautifully browned, golden exterior.

Why You’ll Love This Recipe

This recipe is perfect for busy days when you want a homemade meal waiting for you at dinnertime.

  • Easy preparation: Most of the work happens before the slow cooker is turned on.
  • Tender and juicy meat: Gentle cooking helps keep the chicken moist.
  • Simple ingredients: You probably already have most of the seasonings in your pantry.
  • Family-friendly: The mild herb and garlic flavor works well with a variety of side dishes.
  • Great for leftovers: Shredded chicken can be used in sandwiches, wraps, salads, soups, and casseroles.
  • Minimal cleanup: Everything cooks in one pot.

Ingredients

For the chicken:

  • 1 whole chicken, approximately 4–5 pounds
  • 1 medium onion
  • 4 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika, optional
  • ½ teaspoon dried sage, optional
  • 1 lemon
  • ½ cup chicken broth or water

For the optional finishing step:

  • 1 tablespoon melted butter or olive oil
  • A small pinch of paprika

Step 1: Prepare the Chicken

Remove the chicken from its packaging and take out the giblets if they are included inside the cavity.

Pat the entire chicken dry with paper towels. This small step is important because removing excess moisture helps the seasonings adhere better to the skin.

Place the chicken on a clean cutting board and tuck the wing tips underneath the body if desired. You can also tie the legs together loosely with kitchen twine to help the chicken maintain a neat shape while cooking.

There is no need to cut the chicken into pieces. Keeping it whole makes this recipe particularly convenient and gives you a beautiful centerpiece for the dinner table.

Step 2: Prepare the Seasoning

In a small bowl, combine the paprika, thyme, rosemary, parsley, garlic powder, onion powder, salt, black pepper, and optional smoked paprika and sage.

Mix everything together thoroughly.

The combination creates a balanced seasoning blend: the herbs provide an earthy aroma, paprika contributes color and mild warmth, while garlic and onion add savory depth.

Step 3: Prepare the Aromatics

Peel the onion and cut it into large chunks.

Peel the garlic cloves and lightly crush them with the side of a knife.

Cut the lemon into quarters.

The onion, garlic, and lemon are not simply added for decoration. As the chicken cooks, they release their aromas into the surrounding juices and help create a flavorful cooking environment.

Step 4: Create a Flavorful Base

Place the onion pieces and garlic in the bottom of the slow cooker.

Pour in approximately ½ cup of chicken broth or water.

You don’t need to completely cover the chicken with liquid. The chicken will release additional juices as it cooks, and too much liquid can make the skin especially soft.

The vegetables also create a natural bed that keeps the chicken slightly elevated from the bottom of the slow cooker.
