Gooey Coconut Butter Bars
If you love desserts that are buttery, chewy, and packed with coconut flavor, these Gooey Coconut Butter Bars are the kind of treat that disappears quickly. They have a tender, buttery base, a rich coconut-filled topping, and a soft center that stays wonderfully gooey after baking.
These bars are simple enough for a casual weekend bake but delicious enough to serve at holidays, parties, potlucks, or afternoon gatherings. The combination of golden coconut, butter, vanilla, and a sweet, creamy filling gives every bite a comforting homemade flavor.
Why You’ll Love These Coconut Butter Bars
These bars are especially appealing because they don’t require complicated techniques or unusual ingredients. The base comes together quickly, while the coconut topping creates a rich layer that becomes lightly golden around the edges while remaining soft in the center.
They are also easy to prepare ahead of time. Once completely cooled, the bars can be cut into squares and stored for several days, making them a convenient dessert when you need something sweet ready to serve.
Ingredients
For the buttery base
- 1 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
For the gooey coconut topping
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sweetened shredded coconut
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup sweetened condensed milk
Optional finishing touches
- Extra shredded coconut for sprinkling
- Powdered sugar for dusting
- A small pinch of flaky sea salt
Step-by-Step Method
1. Prepare the baking pan
Preheat your oven to 350°F (175°C).
Line a 9 × 13-inch baking pan with parchment paper, leaving some parchment hanging over the sides. This makes it much easier to lift the finished bars from the pan later.
Lightly grease the parchment and the exposed sides of the pan.
2. Make the buttery base
Pour the melted butter into a large mixing bowl. Add the granulated sugar and brown sugar and whisk until the mixture is smooth and evenly combined.
Add the egg and vanilla extract. Whisk again until everything is incorporated.
In a separate bowl, combine the flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture. Stir with a spatula until a soft dough forms. Avoid overmixing once the flour disappears.
3. Press the base into the pan
Transfer the dough to the prepared baking pan.
Use your fingertips, the back of a spoon, or the bottom of a measuring cup to press the dough into an even layer.
Try to make the thickness consistent from corner to corner so the base bakes evenly.
Bake for approximately 12–15 minutes, just until the surface looks set and the edges have started to turn lightly golden.
The base does not need to be completely baked at this stage because it will return to the oven with the coconut topping.
Remove it from the oven and set it aside while you prepare the filling.
4. Prepare the coconut mixture
In a clean mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar.
Add the eggs one at a time, whisking after each addition. Stir in the vanilla extract.
Pour in the sweetened condensed milk and mix until the filling is smooth.
Add the flour and salt, stirring gently until just combined.
Finally, fold in the shredded coconut. Make sure the coconut is distributed evenly throughout the mixture.
The filling should be thick, rich, and slightly sticky.
