  • 4 medium Yukon Gold or russet potatoes
  • ½ cup finely grated Parmesan cheese

  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh parsley, for finishing
  • Optional: ¼ teaspoon red pepper flakes for a little heat

Step 1: Prepare the Potatoes

Begin by washing the potatoes thoroughly and removing any dirt from the skins. You can peel them if you prefer, but leaving the skins on adds flavor, texture, and a rustic appearance.

Slice the potatoes into rounds approximately ¼ inch thick. Try to keep the slices as uniform as possible so they cook at the same rate. If some slices are considerably thicker than others, the thinner pieces may become overly crisp before the thicker ones are fully tender.

Once sliced, place the potato rounds in a bowl of cold water and let them soak for about 10–15 minutes. This helps remove some of the surface starch, which can encourage better browning and crisping.

Step 2: Dry the Potatoes Thoroughly

Drain the potato slices and spread them over a clean kitchen towel or several layers of paper towels. Pat them thoroughly dry.

This step is more important than it might seem. Excess water on the potatoes creates steam in the oven, which can prevent the Parmesan coating from becoming properly crisp.

For the best results, take a moment to make sure both sides of every potato slice are reasonably dry.

Step 3: Prepare the Parmesan Seasoning

In a small bowl, combine the finely grated Parmesan cheese, minced garlic, Italian seasoning, smoked paprika, salt, and black pepper.

Mix everything together until the seasonings are evenly distributed throughout the cheese.

Finely grated Parmesan works particularly well because it can cling to the potato surface and form a thin, even crust as it melts and browns.

Step 4: Season the Potatoes

Place the dried potato rounds in a large mixing bowl. Drizzle them with olive oil and gently toss until each slice has a light coating.

Add most of the Parmesan seasoning mixture and toss again. Be gentle during this process so the potato slices remain intact.

Make sure the Parmesan mixture is distributed across the slices rather than collecting at the bottom of the bowl.

Step 5: Prepare the Baking Sheet

Preheat your oven to 425°F (220°C).

Line a large baking sheet with parchment paper if desired. Arrange the seasoned potato rounds in a single layer, leaving a little space between each slice.

Avoid overlapping the potatoes. Crowding the baking sheet traps moisture and makes it more difficult for the rounds to become crisp.

For an especially crunchy Parmesan crust, sprinkle a small amount of the remaining Parmesan mixture directly onto the baking sheet beneath each potato round before placing the potatoes on top. As they bake, the cheese will brown and create a deliciously crisp underside.
