Cheeseburger Sausage Bites

Cheeseburger Sausage Bites are the kind of appetizer that combines everything people love about a classic cheeseburger into a small, savory bite. Juicy sausage, melted cheese, and familiar cheeseburger flavors come together in a golden, bite-sized snack that is perfect for parties, game days, potlucks, holiday gatherings, or an easy family appetizer.

Instead of serving a cheeseburger on a bun, this recipe turns those comforting flavors into compact sausage bites that are easy to bake, serve, and enjoy. The outside becomes lightly browned while the inside stays tender, cheesy, and flavorful. They are especially delicious when served warm with ketchup, mustard, or a creamy dipping sauce.

Why You’ll Love These Cheeseburger Sausage Bites

There is a lot to like about this simple appetizer:

  • Big cheeseburger flavor: Ground sausage and cheese create a rich, savory center.
  • Easy preparation: The ingredients come together without complicated cooking techniques.
  • Perfect for parties: Their small size makes them ideal for serving as finger food.
  • Make-ahead friendly: The mixture can be prepared ahead of time and baked when needed.
  • Customizable: You can add bacon, pickles, onions, or different types of cheese.
  • Great for dipping: Serve them with classic burger condiments for an extra burst of flavor.

Ingredients

For approximately 24–30 bites, depending on their size, you will need:

  • 1 pound ground breakfast sausage or mild pork sausage
  • 1 cup shredded sharp cheddar cheese
  • 4 ounces cream cheese, softened
  • 1/2 cup finely chopped onion
  • 1/2 cup seasoned breadcrumbs
  • 1 large egg
  • 1 tablespoon ketchup
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 2 tablespoons finely chopped dill pickles, optional
  • 2 tablespoons finely chopped cooked bacon, optional

For serving:

  • Ketchup
  • Yellow mustard
  • Burger sauce
  • Pickle slices

Step 1: Prepare the Oven

Begin by preheating your oven to 375°F (190°C).

Line a large baking sheet with parchment paper or lightly grease it. The parchment makes cleanup easier and helps prevent the sausage bites from sticking.

Give the oven enough time to fully preheat while you prepare the mixture.

Step 2: Prepare the Onion

Finely chop the onion so the pieces are small enough to blend evenly into the sausage mixture.

For a softer, sweeter onion flavor, you can sauté the chopped onion in a small skillet over medium heat for several minutes until softened. Allow it to cool slightly before adding it to the mixture.

If you prefer a little more texture and a stronger onion flavor, you can add the onion raw.

Step 3: Make the Cheeseburger Mixture

Place the ground sausage in a large mixing bowl.

Add the softened cream cheese, shredded cheddar, chopped onion, breadcrumbs, and egg.

Next, add the ketchup, mustard, garlic powder, onion powder, smoked paprika, and black pepper.

If using them, add the chopped pickles and cooked bacon as well.

Using clean hands or a sturdy spoon, gently mix everything together until the ingredients are evenly distributed.

Try not to overmix. Combining the ingredients just until everything comes together will help keep the finished bites tender rather than dense.

Step 4: Add the Cheese

The cream cheese helps create a smooth, rich texture throughout the mixture, while sharp cheddar provides the unmistakable cheeseburger flavor.

For an even cheesier version, you can replace part of the cheddar with shredded Monterey Jack, Colby Jack, or mozzarella.

Make sure the cheese is distributed evenly so every bite contains a little bit of that creamy, melted flavor.
