Black Pepper Beef Noodle Stir-Fry
If you’re craving a quick, savory meal with plenty of flavor, this Black Pepper Beef Noodle Stir-Fry is a perfect choice. Tender strips of beef are tossed with springy noodles, crisp vegetables, and a rich black pepper sauce that brings everything together. The combination of garlic, soy sauce, and freshly ground black pepper gives the dish a deep, slightly spicy flavor without making it overwhelmingly hot.
Best of all, this is the kind of recipe that comes together quickly once all the ingredients are prepared. The key is to cook the beef over high heat so it develops a flavorful sear while remaining tender, then combine it with the noodles and sauce just long enough for everything to coat evenly.
Ingredients
For the Beef
- 1 lb (450 g) beef steak, such as flank steak, sirloin, or ribeye
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon sesame oil
- 1 teaspoon rice vinegar
- 1/2 teaspoon freshly ground black pepper
For the Noodles
- 8 oz (225 g) noodles, such as lo mein, egg noodles, or wheat noodles
- 1 tablespoon cooking oil
- 1 small onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 cup broccoli florets
- 2 cloves garlic, finely minced
- 1 teaspoon fresh ginger, grated
For the Black Pepper Sauce
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon water
- 1 teaspoon brown sugar
- 1 to 1 1/2 teaspoons freshly ground black pepper
- 1 teaspoon cornstarch
- 1 teaspoon sesame oil
For Garnishing
- Sliced green onions
- Toasted sesame seeds
- Additional freshly ground black pepper
Step 1: Slice and Marinate the Beef
Start by placing the beef on a cutting board and slicing it thinly against the grain. Cutting against the grain shortens the muscle fibers, which helps the beef stay tender after stir-frying.
Transfer the sliced beef to a bowl and add the soy sauce, cornstarch, sesame oil, rice vinegar, and black pepper. Toss everything together until the beef is evenly coated.
Let the beef marinate for about 15–20 minutes while you prepare the remaining ingredients.
Step 2: Prepare the Sauce
In a small bowl, combine the soy sauce, oyster sauce, hoisin sauce, water, brown sugar, black pepper, cornstarch, and sesame oil.
Whisk until the cornstarch is completely dissolved.
The freshly ground black pepper is especially important here. It gives the sauce its characteristic bold flavor, so adjust the amount according to how peppery you like your noodles.
Set the sauce aside.
Step 3: Cook the Noodles
Bring a large pot of water to a boil and cook the noodles according to the package directions.
Try not to overcook them. The noodles will be added to the hot wok or skillet later, where they will continue cooking slightly.
Once they are tender, drain them thoroughly. If your noodles tend to stick together, toss them with a very small amount of oil.
Set them aside.
Step 4: Prepare the Vegetables
Slice the onion and bell pepper into thin strips. Cut the broccoli into small, bite-sized florets.
Keep all the vegetables close to your cooking area because stir-frying moves quickly.
Having everything prepared before you start cooking will help prevent the beef or vegetables from overcooking while you search for ingredients.
