Pecan Pie Muffins

Pecan Pie Muffins bring together everything people love about classic pecan pie in a soft, handheld treat. They have a tender, buttery muffin base, a rich brown-sugar center, and plenty of crunchy pecans throughout. Instead of preparing a pie crust and waiting for a whole pie to cool, these muffins give you the same cozy flavors in a much simpler format.

Ingredients

For the Muffins

  • 1 cup all-purpose flour
  • 1 cup chopped pecans
  • ¾ cup packed light brown sugar
  • ½ cup granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted and slightly cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract

Optional Topping

  • ¼ cup chopped pecans
  • 1 tablespoon brown sugar
  • A small pinch of cinnamon

Step-by-Step Instructions

1. Prepare the Oven and Muffin Pan

Begin by preheating your oven to 350°F (175°C). Grease a 12-cup muffin pan generously with butter or nonstick cooking spray.

You can also use paper liners, although greasing the pan directly can give the muffins slightly more caramelized edges.

2. Prepare the Pecans

Place the chopped pecans in a small bowl and set them aside.

For an even deeper flavor, you can lightly toast the pecans before using them. Spread them on a dry baking sheet and toast for about 5–7 minutes, keeping a close eye on them so they do not burn. Allow them to cool slightly before adding them to the batter.

3. Combine the Dry Ingredients

In a medium mixing bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, and salt.

Break up any large clumps of brown sugar so that the ingredients are evenly distributed.

Stir in the chopped pecans, reserving a small amount if you want to use some for the topping.

4. Mix the Wet Ingredients

In a separate bowl, whisk the melted butter, eggs, and vanilla extract until smooth and well combined.

Make sure the melted butter has cooled slightly before adding the eggs. If the butter is very hot, it can partially cook the eggs.
