Vanilla Custard Slice: A Creamy, Flaky Dessert with a Perfect Vanilla Finish

Vanilla Custard Slice is a classic dessert built around a delicious contrast: crisp, golden layers of pastry surrounding a smooth, rich vanilla custard. Each square has a satisfying pastry crunch before giving way to a soft, creamy center infused with fragrant vanilla.

The beauty of this dessert is that it looks elegant without requiring complicated decoration. The key is preparing a custard that is thick enough to slice neatly while remaining silky and creamy. Chilling the finished dessert thoroughly is equally important because it allows the custard to firm up and makes cutting much easier.

Ingredients

For the Pastry Layers

  • 2 sheets puff pastry, thawed if frozen
  • 1 tablespoon powdered sugar, for dusting

For the Vanilla Custard

  • 4 cups whole milk
  • ¾ cup granulated sugar
  • ½ cup cornstarch
  • 4 large egg yolks
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons unsalted butter
  • ¼ teaspoon salt

For the Topping

  • 1 cup powdered sugar
  • 1–2 tablespoons milk or water
  • ½ teaspoon vanilla extract

Step 1: Prepare the Pastry

Begin by preheating the oven to 400°F (200°C).

Place the puff pastry sheets on baking trays lined with parchment paper. Prick the pastry all over with a fork. This helps prevent the layers from puffing too dramatically while they bake.

Cover the pastry with another sheet of parchment paper and place a second baking tray on top. The weight keeps the pastry relatively flat and creates even layers that will be easier to assemble with the custard.

Bake for approximately 15–20 minutes, or until the pastry is deeply golden and crisp.

Remove the upper tray and parchment during the final few minutes if necessary, allowing the pastry to become evenly browned.

Set the pastry aside and allow it to cool completely.

Step 2: Make the Vanilla Custard

While the pastry cools, prepare the custard.

In a medium saucepan, whisk together the sugar, cornstarch, and salt. Add the egg yolks and whisk until the mixture becomes smooth.

Gradually pour in the milk while continuing to whisk. Adding the milk slowly helps prevent lumps from forming.

Place the saucepan over medium heat. Cook the mixture while whisking constantly, paying particular attention to the bottom and corners of the pan.

After several minutes, the mixture will begin to thicken. Continue cooking until it reaches a thick pudding-like consistency and large bubbles begin to rise through the custard.

Once thickened, remove the saucepan from the heat.

Step 3: Add the Vanilla and Butter

Immediately add the butter and vanilla extract to the hot custard.

Whisk until the butter has completely melted and the custard is smooth and glossy.

Taste the custard carefully once it has cooled slightly. The vanilla should be noticeable without overpowering the creamy flavor.

For an exceptionally smooth filling, you can pass the custard through a fine-mesh sieve into a clean bowl. This removes any small lumps that may have developed during cooking.
