It combines tender pasta, seasoned ground beef, crisp lettuce, cheese, pickles, onions, and a creamy special sauce inspired by the flavors of a Big Mac.
The best part is that everything can be prepared ahead of time, making this a convenient dish for busy days and gatherings.
Ingredients
For the Pasta Salad
- 12 ounces elbow macaroni or small shell pasta
- 1 pound ground beef
- 1 tablespoon olive oil, if needed
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 cups shredded lettuce
- 1 cup shredded cheddar cheese
- 1/2 cup diced dill pickles
- 1/2 cup finely diced yellow onion
- 1/2 cup diced tomatoes, optional
- 2 tablespoons sesame seeds, optional
For the Big Mac-Inspired Sauce
- 3/4 cup mayonnaise
- 1/4 cup ketchup
- 2 tablespoons yellow mustard
- 2 tablespoons finely chopped dill pickles or pickle relish
- 1 tablespoon pickle juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
- Salt and black pepper, to taste
Step 1: Cook the Pasta
Bring a large pot of generously salted water to a boil. Add the pasta and cook according to the package directions until it is al dente.
Avoid overcooking the pasta because it will continue absorbing moisture from the dressing later.
Once cooked, drain the pasta thoroughly and rinse it briefly under cold water. This stops the cooking process and helps cool the pasta quickly.
Transfer it to a large mixing bowl and allow it to cool completely.
Step 2: Brown the Ground Beef
While the pasta is cooling, prepare the beef.
Place a large skillet over medium-high heat and add the ground beef. Break it apart with a wooden spoon or spatula as it cooks.
Season with salt, black pepper, garlic powder, and onion powder. Continue cooking until the beef is completely browned and no pink remains.
Drain away excess grease if necessary.
For the best pasta salad texture, let the cooked beef cool for several minutes before adding it to the other ingredients. You don’t want hot beef warming the lettuce or making the cheese melt.
Step 3: Make the Special Sauce
In a medium bowl, combine the mayonnaise, ketchup, mustard, chopped pickles or relish, and pickle juice.
Add the garlic powder, onion powder, and paprika. Stir everything together until smooth and creamy.
Taste the sauce and adjust the seasoning according to your preference. If you like more tanginess, add another small splash of pickle juice. For a sweeter sauce, add a little extra ketchup.
Place the sauce in the refrigerator while you assemble the salad.
