The secret is cooking the butter-and-sugar mixture long enough to create a glossy toffee coating that hardens around every pretzel without becoming unpleasantly hard or bitter.

What Makes Butter Toffee Pretzels Special?
The appeal comes from the contrast of textures and flavors. The pretzels remain crisp and provide a light saltiness, while the butter toffee adds a deep caramel flavor and a delicate crunch.
A small amount of vanilla enhances the buttery notes, while baking soda helps the cooked toffee become lighter and easier to coat. You can also finish the pretzels with melted chocolate, chopped nuts, or a little extra sea salt for a more elaborate version.
Ingredients
For approximately 6 cups of butter toffee pretzels, you will need:
- 6 cups small pretzel twists or pretzel snaps
- 1 cup unsalted butter
- 1 cup packed light brown sugar
- 2 tablespoons light corn syrup
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ¼ teaspoon salt, if using unsalted pretzels
- Optional: ½ cup melted chocolate
- Optional: 2–3 tablespoons finely chopped nuts
- Optional: a small pinch of flaky sea salt
Step 1: Prepare the Baking Sheet
Begin by preheating your oven to 250°F (120°C).
Line a large rimmed baking sheet with parchment paper or a silicone baking mat. The lining is important because the hot toffee becomes extremely sticky while it is still warm.
Spread the pretzels across the baking sheet in an even layer. Try not to pile them too deeply because you want the toffee mixture to reach as many pretzels as possible.
Step 2: Make the Butter Toffee
Place the butter, brown sugar, and corn syrup in a medium saucepan over medium heat.
Stir gently as the butter melts and the sugar begins to dissolve. Once the mixture starts bubbling, continue cooking while stirring frequently.
The mixture should become smooth, glossy, and slightly darker in color. If you have a candy thermometer, cook the mixture to approximately 285–290°F (140–143°C) for a crisp but not excessively hard coating.
If you do not have a thermometer, cook until the mixture is bubbling evenly and looks thick and caramel-like. Avoid cooking it until it becomes very dark, as this can give the finished pretzels a bitter flavor.
Step 3: Add the Vanilla and Baking Soda
Remove the saucepan from the heat.
Carefully stir in the vanilla extract. The mixture may bubble vigorously when the vanilla is added, so pour it in slowly and keep your face and hands away from the steam.
Add the baking soda and stir until completely incorporated.
The baking soda will cause the toffee to become slightly lighter and foamier. This is desirable because it helps the coating spread more easily over the pretzels.
