Cheesy Baked Asparagus Gratin: A Creamy, Golden Side Dish Recipe
Cheesy Baked Asparagus Gratin is a rich, comforting vegetable dish made with fresh asparagus, creamy sauce, melted cheese, and a golden baked topping. It is simple enough for a weeknight dinner but elegant enough for holidays, family gatherings, or special meals.
This recipe turns asparagus into something warm, savory, and satisfying. The asparagus stays tender with a slight bite, while the creamy cheese sauce coats every spear. Once baked, the top becomes bubbly, golden, and lightly crisp.
Why This Recipe Is Special
Asparagus is naturally fresh, slightly earthy, and delicate. When baked with cream, garlic, parmesan, and mozzarella or cheddar, it becomes rich without losing its vegetable flavor. The gratin style gives the dish a beautiful oven-baked finish, making it look and taste more special than plain steamed asparagus.
It is a great side dish for roasted chicken, steak, salmon, turkey, pasta, rice, or even a vegetarian dinner.
Ingredients
For the Asparagus
- 1 ½ pounds fresh asparagus
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
For the Creamy Cheese Sauce
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon all-purpose flour
- 1 cup heavy cream
- ½ cup milk
- ½ cup grated parmesan cheese
- ½ cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese or Gruyère cheese
- ½ teaspoon Italian seasoning
- ¼ teaspoon paprika
- Salt and black pepper to taste
For the Topping
- ¼ cup grated parmesan cheese
- ¼ cup panko breadcrumbs
- 1 tablespoon melted butter
- 1 tablespoon chopped parsley, optional
Step 1: Prepare the Asparagus
Start by washing the asparagus under cold water. Dry it well with a clean towel or paper towel.
Trim off the tough woody ends. The easiest way is to hold one asparagus spear near the bottom and gently bend it. It will naturally snap where the tender part begins. Use that spear as a guide to cut the rest evenly.
Place the asparagus in a baking dish. Drizzle with olive oil, then season with salt, black pepper, and garlic powder. Toss gently so the asparagus is lightly coated.
Step 2: Preheat the Oven
Preheat your oven to 400°F / 200°C.
A hot oven helps the asparagus cook quickly while allowing the cheese topping to become golden and bubbly. If the oven is too low, the asparagus may become too soft before the top browns.
Step 3: Make the Garlic Butter Base
Place a saucepan over medium heat and add the butter.
Once the butter melts, add the minced garlic. Cook for about 30 seconds to 1 minute, stirring constantly. The garlic should smell fragrant but should not turn dark brown.
This garlic butter creates the flavor base for the creamy sauce.
Step 4: Add the Flour
Sprinkle the flour into the saucepan and stir well.
Cook the flour with the butter for about 1 minute. This forms a light roux, which helps thicken the sauce.
Do not skip this step because it prevents the sauce from being thin and watery.
Step 5: Add the Cream and Milk
Slowly pour in the heavy cream while whisking. Then add the milk.
Whisk continuously until the mixture becomes smooth. Let it simmer gently for 2 to 3 minutes until it begins to thicken.
Keep the heat medium-low. Do not boil the sauce too hard because cream can separate if overheated.
