Gooey Butter Cookies: A Soft, Sweet, Melt-in-Your-Mouth Cookie Recipe

Gooey Butter Cookies are soft, rich, and beautifully sweet cookies with a tender center and a lightly crackled powdered sugar coating. They are inspired by the famous gooey butter cake, but instead of being baked as a cake, the same creamy, buttery flavor is turned into small cookies that are easy to serve and perfect for sharing.

These cookies are popular because they are simple to make, require basic ingredients, and have a texture that is different from regular cookies. The outside is slightly crisp from the powdered sugar, while the inside stays soft, chewy, and almost cake-like. They are great for holidays, parties, lunchbox treats, bake sales, or a quick homemade dessert.

What Makes Gooey Butter Cookies Special?

The secret ingredient is cream cheese. It gives the cookies their soft texture and rich flavor. Butter adds warmth and richness, while powdered sugar on the outside creates a sweet crackled look as the cookies bake.

Unlike crunchy cookies, gooey butter cookies are meant to be soft in the center. They should not be overbaked. When they come out of the oven, they may look slightly underdone, but they firm up as they cool.

Ingredients

  • ½ cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 box yellow cake mix
  • ½ cup powdered sugar, for rolling

Optional Add-Ins

  • ½ teaspoon almond extract
  • ½ cup white chocolate chips
  • ½ cup mini chocolate chips
  • 1 tablespoon lemon zest
  • Sprinkles for a birthday-style version
  • Cinnamon for a warm holiday flavor

Step 1: Soften the Butter and Cream Cheese

Start by bringing the butter and cream cheese to room temperature.

This step is important because softened butter and cream cheese mix smoothly. If they are too cold, the dough may become lumpy. Leave them on the counter for about 30 to 45 minutes before baking.

Do not melt the butter. Melted butter can make the dough too loose and may cause the cookies to spread too much.

Step 2: Cream the Butter and Cream Cheese

Place the softened butter and cream cheese in a large mixing bowl.

Beat them together using a hand mixer or stand mixer until the mixture becomes smooth, creamy, and light.

This creates the rich base of the cookie dough. Make sure there are no large cream cheese lumps before moving to the next step.

Step 3: Add the Egg and Vanilla

Add the egg and vanilla extract to the bowl.

The egg helps bind the dough, while vanilla gives the cookies a warm, classic bakery flavor. If you want a slightly stronger flavor, you can add a small amount of almond extract as well.
