For the Graham Cracker Crust
- 1 ½ cups finely crushed graham crackers
- 6 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
- Pinch of salt
For the Cream Filling
- 8 ounces cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream, cold
- ½ cup powdered sugar, for whipping the cream
Optional Toppings
- Whipped cream
- Fresh berries
- Graham cracker crumbs
- Chocolate shavings
- Caramel sauce
- Sliced bananas
- Chopped nuts
Step 1: Prepare the Graham Cracker Crust
Start by crushing the graham crackers into very fine crumbs. You can use a food processor or place the crackers in a sealed bag and crush them with a rolling pin.
Measure out 1 ½ cups of crumbs and place them in a mixing bowl.
Add the melted butter, granulated sugar, and a small pinch of salt. Stir everything together until the crumbs are evenly coated and the mixture resembles damp sand.
The butter is important because it binds the crumbs together once the crust is chilled.
Step 2: Press the Crust into the Pie Dish
Transfer the crumb mixture into a 9-inch pie dish.
Using the bottom of a measuring cup, drinking glass, or the back of a spoon, firmly press the crumbs across the bottom of the dish. Then press some of the mixture up the sides to create an even crust.
Take your time during this step. A firmly packed crust will hold together much better when the pie is sliced.
Place the crust in the refrigerator while you prepare the filling.
For an especially firm crust, you can chill it for about 20–30 minutes before adding the filling.
Step 3: Make the Cream Cheese Base
Place the softened cream cheese in a large mixing bowl.
Beat it with an electric mixer until it becomes smooth and creamy. Make sure there are no noticeable lumps before continuing.
Add ½ cup powdered sugar and the vanilla extract. Beat again until the mixture is smooth and well combined.
Using softened cream cheese is important. Cold cream cheese can leave small lumps in the filling and make it difficult to achieve a silky texture.
Step 4: Whip the Heavy Cream
In a separate clean bowl, pour in the cold heavy whipping cream.
Add ½ cup powdered sugar and beat on medium-high speed until the cream forms medium-to-stiff peaks.
When you lift the beaters, the whipped cream should hold its shape. Avoid beating it too far, as over-whipping can make the cream grainy.
Keeping the heavy cream cold will also help it whip properly.
