Zesty Italian Pasta Salad: A Fresh, Colorful Step-by-Step Recipe

Zesty Italian Pasta Salad is a bright, flavorful, and refreshing dish made with tender pasta, crisp vegetables, savory cheese, herbs, and a tangy Italian dressing. It is the perfect recipe for picnics, barbecues, lunch boxes, potlucks, family dinners, or meal prep.

This salad is loved because it is simple to make, easy to customize, and tastes even better after chilling. The pasta absorbs the dressing, the vegetables stay crunchy, and every bite has a mix of tangy, salty, fresh, and savory flavors.

What Makes Zesty Italian Pasta Salad Special?

The word “zesty” comes from the bold dressing. Instead of a heavy creamy sauce, this salad uses Italian dressing made with olive oil, vinegar, garlic, herbs, mustard, and seasonings. It gives the pasta a fresh, tangy flavor without making it feel too rich.

The best pasta salad has balance. The pasta should be cooked just right, the vegetables should be fresh and colorful, and the dressing should be strong enough to flavor everything after chilling.

Ingredients

For the Pasta Salad

  • 1 pound rotini pasta, penne, fusilli, or bow-tie pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced
  • ½ cup red onion, thinly sliced
  • ½ cup black olives, sliced
  • ½ cup green olives, optional
  • 1 cup mozzarella pearls or cubed mozzarella
  • ½ cup parmesan cheese, grated or shaved
  • ½ cup sliced pepperoni or salami, optional
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped, optional

For the Zesty Italian Dressing

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or sugar
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried oregano
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes, optional

Step 1: Choose the Right Pasta

Short pasta works best for pasta salad. Rotini, fusilli, penne, and bow-tie pasta are great choices because they hold dressing well.

Avoid long pasta like spaghetti or linguine because it is harder to mix with the vegetables and dressing.

Rotini is one of the best options because the spiral shape catches the dressing, herbs, and small pieces of vegetables.

Step 2: Cook the Pasta

Bring a large pot of water to a boil.

Add a generous amount of salt to the water, then add the pasta.

Cook the pasta according to the package instructions until it is al dente. This means the pasta should be cooked but still slightly firm.

Do not overcook the pasta. Soft pasta can become mushy after mixing with dressing and chilling.
