Ingredients
You only need three basic ingredients:
- 4 medium potatoes (Russet or Yukon Gold work best)
- 1 cup buttermilk
- Salt (to taste)
Step-by-Step Method
1. Prepare the Potatoes
Start by washing the potatoes thoroughly under cold water to remove any dirt. Since the skins will be eaten, make sure they’re clean. Pat them dry with a kitchen towel.
Using a fork, prick each potato a few times. This allows steam to escape during baking and prevents them from bursting in the oven.
2. Preheat the Oven
Set your oven to 200°C (400°F) and allow it to fully preheat. A hot oven is key to achieving a crispy skin while keeping the inside fluffy.
3. First Bake (Without Buttermilk)
Place the potatoes directly on the oven rack or on a baking tray. Bake them for about 45–60 minutes, depending on their size.
You’ll know they’re ready when:
- The skin is slightly crisp
- A knife slides easily into the center
4. Add the Buttermilk
Remove the potatoes from the oven and let them cool slightly so you can handle them.
Cut a slit lengthwise across the top of each potato. Gently press the ends to open them up. Pour a generous amount of buttermilk into each potato, letting it soak into the soft interior.
