Preparation Method

Follow these steps to create your beautiful Rolled Strawberry Cake:

  1. Prepare the Cake Batter:
    • Preheat your oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
    • In a large mixing bowl, beat the eggs on high speed for about 5 minutes until they are thick, pale, and creamy. Gradually add the granulated sugar, continuing to beat until the mixture is light and fluffy. Mix in the vanilla extract.
    • In a separate bowl, sift together the flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until fully combined, being careful not to deflate the batter.
  2. Bake the Cake:
    • Pour the batter into the prepared pan, spreading it evenly to the edges. Bake for 10-12 minutes or until the cake springs back when lightly touched.
    • While the cake is baking, prepare a clean kitchen towel by dusting it generously with powdered sugar. This will prevent the cake from sticking when you roll it.
  3. Roll the Cake:
    • As soon as the cake is done, carefully invert it onto the prepared towel. Peel off the parchment paper. Starting from one of the short sides, gently roll the cake up with the towel inside. Let it cool completely in this rolled position.
  4. Prepare the Filling:
    • In a chilled mixing bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form. Gently fold in the chopped strawberries.
  5. Fill and Roll the Cake:
    • Once the cake has cooled, carefully unroll it and remove the towel. Spread the whipped cream and strawberry mixture evenly over the surface, leaving a small border around the edges. Re-roll the cake without the towel, keeping it tight but gentle.
  6. Chill and Serve:
    • Transfer the rolled cake to a serving platter, seam side down. Chill in the refrigerator for at least 30 minutes to set. Before serving, dust with powdered sugar and garnish with extra strawberries if desired. Slice and enjoy!
