No Bake Chocolate Oat Bars

 

Instructions

1. Prepare the Pan

  • Grease a 9×9-inch square pan and set aside.


2. Make the Oat Mixture

  1. In a large saucepan over medium heat, melt the butter.

  2. Stir in brown sugar and vanilla extract until smooth.

  3. Add quick-cooking oats and cook over low heat for 2–3 minutes, stirring, until everything is well combined.

  4. Press half of the oat mixture firmly into the bottom of the prepared pan. Reserve the remaining half for the topping.


3. Make the Chocolate Layer

  1. In a small heavy saucepan over low heat, melt chocolate chips and peanut butter together, stirring frequently until smooth.

  2. Pour the chocolate mixture evenly over the oat crust in the pan.


4. Top & Chill

  1. Crumble the reserved oat mixture over the chocolate layer and gently press it in.

  2. Cover the pan and refrigerate for 2–3 hours or overnight until firm.


5. Serve

  • Bring to room temperature before cutting into bars.

  • Store leftovers in an airtight container in the refrigerator.

  • Nut-Free Option: Use sunflower seed butter instead of peanut butter.

  • Extra Chocolatey: Sprinkle chocolate chips or drizzle melted chocolate on top before chilling.
