Strawberry Pretzel Salad

 

Instructions

  1. Make the Crust

    • Pulse the pecans in a food processor or blender until they form a coarse meal.

    • Stir together the ground pecans, melted butter, brown sugar substitute, and vanilla.

    • Press the mixture firmly into a greased 9×9-inch baking dish.

  2. Prepare the Creamy Layer

    • In a bowl, beat the cream cheese with the confectioners sugar substitute until smooth.

    • In a separate bowl, whip the heavy cream with vanilla until soft peaks form.

    • Gently fold the whipped cream into the cream cheese mixture until combined.

    • Spread evenly over the crust. Top with a single layer of sliced strawberries.

    • Place in the freezer for 30 minutes to firm up.

  3. Make the Gelatin Topping

    • Whisk together hot water, sugar substitute, strawberry flavoring, gelatin, and vanilla.

    • Let cool slightly until it begins to thicken.

    • Carefully pour over the cream cheese layer.

  4. Chill & Serve

    • Refrigerate until the gelatin is fully set.

    • Slice, serve, and watch it disappear! 🎉
