  • 4 medium potatoes, cut into chunks
  • 3 carrots, sliced into thick sticks

  • 1 lemon, halved
  • 6 garlic cloves, crushed
  • 3 tablespoons olive oil
  • 3 tablespoons melted butter
  • Fresh herbs: rosemary, thyme, and parsley (about 2 tablespoons each, chopped)
  • Salt and black pepper, to taste

Step-by-Step Preparation

Step 1: Prepare the Chicken

  • Rinse the chicken thoroughly under cold water, then pat it dry with a paper towel.
  • Rub the outside and inside cavity of the chicken generously with salt and black pepper.
  • Place half a lemon and a few garlic cloves inside the cavity. This will infuse the meat with natural citrusy and garlicky notes as it roasts.
