Cheesy Herb Mashed Potato Puffs

 

Directions

1. Prep the Oven & Muffin Tin

  • Preheat oven to 400°F (200°C).

  • Lightly spray a 12-cup muffin tin with non-stick cooking spray.

2. Make the Mixture

  • In a large bowl, combine mashed potatoes, cheddar, Parmesan, eggs, flour, chives, garlic powder, salt, and pepper. Mix until smooth and fully incorporated.

3. Fill the Muffin Tin

  • Spoon the potato mixture into the prepared tin, filling each cup about ¾ full.

4. Bake

  • Bake for 20–25 minutes, until tops are golden brown and crispy.

5. Serve

  • Let cool in the tin for a few minutes before removing. Serve warm, straight from the oven.

  • Add heat: Mix in chopped jalapeños or a pinch of cayenne pepper.

  • Extra indulgence: Stir in crumbled bacon for a smoky flavor.

  • Lighter option: Replace some of the cheese with Greek yogurt.
