Step 1: Prepare the Beef

  1. Pat the beef cubes dry with paper towels — this helps them brown nicely.
  2. Season with a little salt and pepper.
  3. In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat.
  4. Add half the beef cubes, searing them until browned on all sides (about 4–5 minutes).
  5. Remove the browned beef and repeat with the remaining half, adding more oil if necessary.
