Step 1: Prepare Your Pan
- Line a baking sheet or a large pan with parchment paper or a silicone baking mat. Set it aside for later.
Step 2: Cook the Toffee
- In a heavy-bottomed saucepan, melt the butter over medium heat.
- Add the sugar and salt, stirring constantly until the sugar dissolves and the mixture comes to a boil.
- Cook toffee mixture – Continue cooking while stirring frequently. Use a candy thermometer to monitor the temperature; you’ll want the mixture to reach 285°F (soft crack stage). This will take around 10-15 minutes. Be patient and keep stirring to avoid burning.
- Once the toffee reaches the correct temperature, remove the saucepan from the heat and stir in the vanilla extract.
Step 3: Pour and Spread the Toffee
- Carefully pour the hot toffee mixture onto the prepared baking sheet, spreading it out evenly using a spatula or by tilting the pan gently.
Step 4: Add the Chocolate and Toppings
- While the toffee is still hot, sprinkle the chocolate chips evenly over the top.
- Wait a minute or two until the chocolate begins to melt. Then, use a spatula to spread the melted chocolate across the surface of the toffee.
- If desired, sprinkle chopped pecans or almonds over the melted chocolate for added texture and flavor.
Step 5: Let it Cool
- Allow the toffee to cool completely. You can let it sit at room temperature or place it in the refrigerator for quicker setting.
- Once it’s fully hardened, break it into bite-sized pieces using your hands or a knife.

- Avoid stirring after it boils: Once your toffee mixture starts boiling, avoid stirring too much, as this can cause the sugar to crystallize.
- Candy thermometer: Using a candy thermometer ensures the perfect texture. The toffee should reach 285°F (soft crack stage) to get the ideal crunch without being too hard.
- Customize the toppings: If you’re not a fan of nuts, feel free to skip them or replace them with something else like crushed candy canes or sea salt for a holiday twist.
