Igloo Bites — a cozy, bite-sized dessert (step-by-step)

Tiny snowy domes that look like little igloos and taste like a chewy coconut-vanilla cloud. These Igloo Bites are no-bake (mostly), easy for beginners, and great for parties, school snacks, or a fun weekend project. Recipe below makes about 24 igloo bites.


Ingredients (makes ~24)

  • 3 cups (240 g) desiccated/sweetened shredded coconut, plus extra for rolling
  • 1 can (14 oz / 400 ml) sweetened condensed milk
  • 4 oz (115 g) cream cheese, softened (see vegan note)
  • 1 tsp pure vanilla extract
  • 1–2 tbsp powdered sugar (optional — only if you like them sweeter)
  • 12 oz (340 g) white chocolate or white candy melts, for coating
  • 2–3 oz (60–85 g) dark or semi-sweet chocolate (for doorway detail)
  • 1 tbsp coconut oil or neutral oil (optional — thins the white chocolate for dipping)
  • Small pinch of fine sea salt

Vegan / dairy-free option: replace sweetened condensed milk with 1 can (400 ml) full-fat coconut milk reduced on the stove until slightly thickened (or use commercial vegan condensed milk), and replace cream cheese with 4 oz (115 g) vegan cream cheese.


Equipment

  • Mixing bowl
  • Rubber spatula or wooden spoon
  • Small cookie scoop or tablespoon
  • Baking sheet lined with parchment or silicone mat
  • Small saucepan (for double boiler) or microwave-safe bowl
  • Fork or dipping tool
  • Piping bag or small plastic bag (for chocolate detail)
  • Silcone half-sphere mold (optional — makes perfect domes)
  • Refrigerator / freezer

Prep steps (10 minutes)

  1. Line a baking sheet with parchment.
  2. If using a silicone half-sphere mold, set it out; if not, you’ll roll the mixture by hand.
  3. Chop the dark chocolate finely and set aside for doorway piping.
