Cheesy Meatloaf Over Mashed Potatoes

Instructions

Step 1: Prepare the Meatloaf Mixture

  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Combine Ingredients: In a large bowl, mix the ground beef, ground pork (if using), breadcrumbs, chopped onion, garlic, egg, milk, Worcestershire sauce, ketchup, salt, black pepper, Italian seasoning, and smoked paprika. Use your hands or a spatula to mix until all ingredients are well incorporated.
  3. Shape the Meatloaf: On a baking sheet or in a baking dish lined with foil, shape the mixture into a loaf. Spread a thin layer of ketchup over the top for a caramelized glaze.
  4. Bake: Bake in the preheated oven for about 45-55 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).

Step 2: Make the Mashed Potatoes

  1. Boil the Potatoes: While the meatloaf is baking, place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until the potatoes are tender when pierced with a fork, about 15-20 minutes.
  2. Drain and Mash: Drain the potatoes well and return them to the pot. Add the butter and heavy cream (or milk), and mash until smooth and creamy. Season with salt and pepper to taste. Adjust the consistency by adding more cream if desired.

Step 3: Assemble and Add Cheese

  1. Layer the Mashed Potatoes: Once the meatloaf is cooked, remove it from the oven and let it rest for a few minutes. In a large, foil-lined baking dish, spread an even layer of mashed potatoes.
  2. Place the Meatloaf on Top: Gently place the cooked meatloaf on top of the mashed potatoes. For individual servings, slice the meatloaf before placing it over the mashed potatoes.
  3. Add the Cheese: Sprinkle the shredded cheddar cheese generously over the meatloaf, allowing some to melt down into the mashed potatoes. The cheese will create a deliciously gooey layer when baked.

Step 4: Bake Again for Melty Cheese

  1. Bake: Return the baking dish to the oven and bake at 350°F (175°C) for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  2. Garnish: For an extra touch, sprinkle fresh parsley or thyme on top.

Serve and Enjoy

This dish is best enjoyed warm, straight out of the oven. Serve it as a complete meal with a side of steamed green beans or a fresh salad. The combination of savory meatloaf, creamy mashed potatoes, and gooey cheese will have everyone reaching for seconds!

Tips for the Perfect Cheesy Meatloaf Over Mashed Potatoes

  • Customize the Meatloaf: Feel free to add other ingredients like shredded carrots or bell peppers to the meatloaf mixture for added flavor and texture.
  • Choose Your Cheese Wisely: While cheddar adds a delicious sharpness, feel free to use mozzarella, Colby Jack, or a cheese blend for a different flavor profile.
  • For a Crispier Finish: After adding the cheese, broil the dish for a couple of minutes to create a golden, crispy cheese topping.
  • Make-Ahead Option: You can prepare both the meatloaf and mashed potatoes ahead of time. Simply assemble, top with cheese, and bake when ready to serve.
