Ooey Gooey Bars: A Rich, Buttery Dessert That Melts in Your Mouth

Few desserts are as indulgent and satisfying as ooey gooey bars. With a soft, buttery base and a rich, creamy topping that bakes into a sweet, slightly chewy layer, these bars are beloved for their irresistible texture and simple preparation. Often associated with classic Southern baking traditions, ooey gooey bars require only a handful of ingredients but deliver a dessert that feels decadent and bakery-worthy.

Perfect for potlucks, family gatherings, or whenever you crave something sweet, this dessert comes together quickly and fills your kitchen with the warm aroma of butter, sugar, and vanilla.

Below is a detailed step-by-step guide to creating these delicious bars at home.

Ingredients

For the crust layer:

  • 1 box yellow cake mix (about 15.25 oz)
  • 1/2 cup unsalted butter, melted
  • 1 large egg

For the gooey topping:

  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 1/2 to 4 cups powdered sugar

Optional additions:

  • A pinch of salt
  • Chocolate chips
  • Chopped pecans or walnuts
  • A light dusting of powdered sugar for serving

Step 1: Prepare the Baking Pan

Begin by preheating your oven to 350°F (175°C).

Lightly grease a 9×13-inch baking dish with butter or nonstick spray. You can also line the pan with parchment paper, leaving a small overhang on the sides to make removing the bars easier after baking.

This preparation prevents sticking and helps maintain clean edges when cutting the finished dessert.

Step 2: Make the Buttery Crust

In a large mixing bowl, combine the yellow cake mix, melted butter, and one egg.

Stir the ingredients together until a thick dough forms. The mixture will be dense and slightly sticky—this is normal.

Once combined, transfer the dough into the prepared baking pan. Using your hands or the back of a spatula, press the dough evenly across the bottom of the pan to form the crust layer.

Try to make the surface as even as possible so the topping spreads uniformly later.

Step 3: Prepare the Creamy Gooey Layer

In a separate bowl, beat the softened cream cheese until it becomes smooth and fluffy. This step is important because it prevents lumps in the topping.

Add the two eggs and vanilla extract, then continue mixing until fully combined.

Gradually add the powdered sugar, one cup at a time, mixing well after each addition. The mixture will become thick, creamy, and glossy.

If you enjoy a slightly less sweet dessert, use closer to 3 1/2 cups of powdered sugar. For a richer, sweeter topping, go with the full 4 cups.
