My Grandma’s Apple Strudel: A Timeless Homemade Dessert

Few desserts carry the warmth of family tradition like a homemade apple strudel. Passed down through generations, my grandma’s apple strudel is the kind of dessert that fills the kitchen with the comforting scent of cinnamon, baked apples, and buttery pastry. It’s simple, rustic, and incredibly satisfying. Each bite combines tender apples, warm spices, and flaky layers of dough that crisp beautifully in the oven.

Although strudel might look complicated, the truth is that with a little patience and the right method, anyone can make it at home. This step-by-step guide will walk you through preparing a delicious apple strudel that tastes just like it came from a traditional family kitchen.

What Makes Apple Strudel Special

Apple strudel has roots in Central European baking traditions and is beloved for its delicate layers of pastry wrapped around a sweet apple filling. What makes grandma’s version so special is its balance: the apples stay juicy but not soggy, the pastry remains crisp, and the spices add warmth without overpowering the fruit.

A touch of lemon brightens the filling, while raisins and breadcrumbs help absorb excess juice and create the perfect texture.

Ingredients

For the Dough

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable oil or melted butter
  • 3/4 cup warm water

For the Filling

  • 5–6 medium apples, peeled and thinly sliced
  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1/2 cup raisins (optional but traditional)
  • 1/2 cup breadcrumbs
  • 3 tablespoons melted butter

For Finishing

  • 2 tablespoons melted butter
  • Powdered sugar for dusting

Step-by-Step Instructions

Step 1: Prepare the Dough

Start by making the strudel dough. In a large bowl, combine the flour and salt. Add the oil and warm water gradually while mixing until a soft dough forms.

Knead the dough on a clean surface for about 8–10 minutes until it becomes smooth and elastic. This step is important because the dough needs to stretch very thin later.

Once kneaded, form the dough into a ball and lightly coat it with oil. Cover it with a bowl or plastic wrap and let it rest for 30 minutes. Resting relaxes the gluten and makes stretching much easier.

Step 2: Prepare the Apple Filling

While the dough rests, prepare the filling.

In a large bowl combine:

  • sliced apples
  • sugar
  • cinnamon
  • lemon juice
  • raisins

Mix everything gently until the apples are evenly coated. Set aside.
