Our macaroni salad is a wonderful summer meal that is versatile enough to be brought to get-togethers or parties, served as a side dish at lunch or supper, or grilled over the coals at a barbecue. You’re going to go crazy for the mayonnaise and sour cream dressing! It enhances the flavors to an incredible degree!

While preparing a pasta salad, it is important to coat the pasta with a GENEROUS amount of dressing. This will prevent the pasta from becoming dry and gummy. We don’t use just mayonnaise; rather, in order to cut through the fat and make it less greasy, we mix in a little amount of sour cream. There is also the option of using Mexican crema or yogurt.

THE INGREDIENTS LIST:

FOR THE SALAD; I USED:

250 grams.Of dry macaroni pasta.

A small red bell pepper – chopped.

A small red onion – finely diced.

A small carrot – shredded.

2 dill pickles – finely chopped.

1/4 Cup.Of chopped celery.

THE DRESSING INGREDIENTS:

1 Cup.Of mayonnaise.

1/4 Cup.Of sour cream.

2 Tbsp.Of white vinegar.

1 Tbsp.Of Dijon mustard.

2 Tbsp.Of fresh chopped parsley.

1 Tbsp.Of fresh chives.

1 1/2 Tsp.Of sugar.

1 Tsp.Of minced garlic.

1 1/4 Tsp.Of salt.

1/2 Tsp.Of pepper.

PREPARATION:

1st Step

Over high heat, bring a large saucepan of salted water to a boil in the pot. Add the pasta and boil it until it is al dente, which means it is just soft enough to pierce with a fork or follow the guidelines on the package.

2nd Step

As the pasta is coming to a boil, you may prepare the salad components by chopping them up and placing them in a big serving dish. In a low-sided dish, combine all of the ingredients for the DRESSING.

3rd Step

When it has been cooked, the pasta should be drained and rewashed under fresh, cold running water. After a thorough draining, add the drained beans to the big-serving dish along with the other SALAD components.

4th Step

Pour the DRESSING over the salad, then give it a good spin to incorporate everything evenly. Add salt, pepper, and vinegar to taste.
