This slow cooker version takes all the rich, savory flavors of the traditional dish and simplifies the process, allowing you to enjoy a hearty meal with minimal effort. Perfect for busy days or cozy evenings, slow cooker goulash is filling, flavorful, and incredibly satisfying.

What Is Goulash?

Goulash is a classic dish with roots in Central and Eastern Europe, traditionally made with meat, paprika, and vegetables. Over time, different regions have adapted it into their own versions. This slow cooker goulash leans toward the American-style variation, combining ground beef, pasta, tomatoes, and spices into a thick, stew-like meal.

Ingredients You’ll Need

To make a delicious slow cooker goulash, gather the following:

  • 1 lb (450g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 ½ cups elbow macaroni (uncooked)
  • 1 cup shredded cheddar cheese (optional)

Step-by-Step Method

Step 1: Brown the Beef

Start by heating a skillet over medium heat. Add the ground beef and cook until it’s fully browned. Break it apart with a spoon as it cooks. Once done, drain any excess grease.

This step helps develop a deeper flavor and prevents the goulash from becoming greasy.

Step 2: Sauté Aromatics

In the same pan, add the chopped onion and cook for about 2–3 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

This enhances the base flavor of your goulash before it goes into the slow cooker.
