Sausage, Peppers, and Onions

A hearty, flavorful classic that’s simple, satisfying, and perfect for any occasion

Few dishes capture comfort and bold flavor quite like sausage, peppers, and onions. This classic combination is beloved for its rich, savory taste, vibrant colors, and incredible aroma. Whether served in a sandwich, over rice, or enjoyed on its own, it’s a dish that feels both rustic and deeply satisfying.

Below is a detailed, step-by-step guide to making this delicious meal at home.

🛒 Ingredients

  • 4 Italian sausages (mild or spicy, based on preference)
  • 2 large bell peppers (any color: red, yellow, or green)
  • 1 large onion
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional for heat)
  • 1/2 cup crushed tomatoes or tomato sauce (optional, for a saucier version)
  • Fresh basil or parsley (for garnish)

🔪 Step 1: Prepare the Ingredients

Start by slicing your vegetables:

  • Cut the bell peppers into thin strips
  • Slice the onion into long, thin pieces
  • Mince the garlic finely

Keeping everything evenly sliced ensures consistent cooking and a better texture in every bite.

🔥 Step 2: Brown the Sausages

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

  • Add the sausages whole
  • Cook them for about 6–8 minutes, turning occasionally until browned on all sides

They don’t need to be fully cooked yet—just nicely browned. Once done, remove them from the pan and set aside.

🧅 Step 3: Cook the Onions and Peppers

In the same skillet, add the remaining tablespoon of olive oil.

  • Toss in the sliced onions first
  • Cook for about 3–4 minutes until they start to soften
  • Add the peppers and cook for another 5–7 minutes

Stir occasionally until the vegetables are tender and slightly caramelized. This step builds the sweet, rich flavor of the dish.
