Creamy Caramel Custard Pie: A Silky, Melt-in-Your-Mouth Classic

There’s something timeless and comforting about a Creamy Caramel Custard Pie. Inspired by the smooth texture of traditional caramel custard and the richness of a baked pie, this dessert combines a buttery crust, a luscious custard filling, and a golden caramel layer that adds depth and sweetness. It’s elegant enough for special occasions but simple enough to make at home with patience and care.

Below is a detailed, step-by-step guide to help you create this indulgent dessert from scratch.

🥧 Ingredients

For the Pie Crust:

  • 1 ¼ cups all-purpose flour
  • ½ cup cold unsalted butter (cut into cubes)
  • 2–3 tablespoons ice water
  • 1 tablespoon sugar
  • Pinch of salt

For the Caramel Layer:

  • ¾ cup granulated sugar
  • 2 tablespoons water

For the Custard Filling:

  • 2 cups whole milk
  • ¾ cup heavy cream
  • 3 large eggs
  • 2 egg yolks
  • ½ cup sugar
  • 1 tablespoon vanilla extract
  • Pinch of salt

🧁 Step 1: Prepare the Pie Crust

  1. In a mixing bowl, combine flour, sugar, and salt.
  2. Add the cold butter cubes and rub them into the flour using your fingers until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.
  4. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

👉 Chilling the dough helps prevent shrinking during baking.

🔥 Step 2: Blind Bake the Crust

  1. Preheat your oven to 180°C (350°F).
  2. Roll out the chilled dough and place it into a pie dish. Trim excess edges.
  3. Prick the base with a fork, line with parchment paper, and fill with pie weights or beans.
  4. Bake for 15 minutes, remove weights, then bake another 10 minutes until lightly golden.
  5. Let it cool completely.

🍯 Step 3: Make the Caramel

  1. In a saucepan, combine sugar and water over medium heat.
  2. Let it cook without stirring until it turns a deep amber color.
  3. Quickly pour the caramel into the baked crust, tilting to coat the bottom evenly.
  4. Allow it to set and harden.

⚠️ Be careful—caramel is extremely hot and can burn quickly.
