Chicken Sub Salad: A Fresh and Flavorful Twist on the Classic Sandwich

Chicken Sub Salad combines all the delicious flavors of a traditional chicken submarine sandwich into a lighter, fresher, and more versatile dish. Instead of serving the ingredients inside a bread roll, everything is tossed together in a vibrant salad packed with juicy chicken, crisp vegetables, savory cheese, and a tangy dressing. It is perfect for lunch, dinner, meal prep, or even as a healthy alternative to a classic deli sandwich.

This recipe offers the satisfying taste of a chicken sub while providing a refreshing balance of textures and flavors. The combination of tender chicken, crunchy lettuce, colorful vegetables, and zesty dressing creates a meal that is both nutritious and filling.

Ingredients

For the Salad

  • 2 cups cooked chicken breast, diced or shredded
  • 4 cups romaine lettuce, chopped
  • 1 cup iceberg lettuce, chopped
  • 1 medium tomato, diced
  • ½ cucumber, sliced
  • ½ red onion, thinly sliced
  • ½ green bell pepper, sliced
  • ½ cup shredded mozzarella cheese
  • ¼ cup black olives, sliced
  • ¼ cup banana pepper rings

For the Dressing

  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste

Step-by-Step Method

Step 1: Prepare the Chicken

If using raw chicken breast, season it lightly with salt, pepper, and a pinch of garlic powder. Cook it in a skillet over medium heat for approximately 6–8 minutes per side, or until fully cooked.

Once cooked:

  1. Remove the chicken from the heat.
  2. Allow it to rest for 5 minutes.
  3. Dice it into bite-sized pieces or shred it using two forks.

Allow the chicken to cool slightly before adding it to the salad.

Step 2: Wash and Prepare the Vegetables

Fresh vegetables are the foundation of a great Chicken Sub Salad.

  1. Wash the lettuce thoroughly and dry it well.
  2. Chop the romaine and iceberg lettuce into bite-sized pieces.
  3. Dice the tomato.
  4. Slice the cucumber into thin rounds.
  5. Thinly slice the red onion and green bell pepper.
  6. Drain the olives and banana peppers if packed in liquid.

Place all prepared vegetables into a large salad bowl.

Step 3: Add the Chicken and Cheese

Once the vegetables are ready:

  1. Add the diced or shredded chicken to the bowl.
  2. Sprinkle the mozzarella cheese evenly over the top.
  3. Add the olives and banana peppers for extra flavor.

The mixture should resemble the filling of a loaded chicken sub sandwich.
