Garbage Bread: The Ultimate Loaded Comfort Bake

If you’re looking for a fun, hearty, and incredibly customizable dish, Garbage Bread might just become your new favorite. Despite its quirky name, there’s nothing “garbage” about it—this dish is all about using delicious leftovers or favorite ingredients, wrapped in soft dough and baked to golden perfection. Think of it as a stuffed bread roll packed with bold flavors, melty cheese, and savory goodness.

What Is Garbage Bread?

Garbage Bread is essentially a rolled-up loaf of dough filled with a mix of meats, vegetables, cheese, and sauces. It’s similar to a stromboli but more flexible—you can throw in whatever you have on hand. It’s perfect for reducing food waste while creating something satisfying and crave-worthy.

Ingredients You’ll Need

For the dough:

  • 1 loaf of pizza dough (store-bought or homemade)
  • 1 tablespoon olive oil (for brushing)

For the filling (customizable):

  • 1 cup cooked ground beef or sausage
  • ½ cup cooked bacon bits (optional)
  • 1 cup shredded mozzarella cheese
  • ½ cup cheddar cheese
  • ½ cup sautéed onions and bell peppers
  • ½ cup mushrooms (optional)
  • 2–3 tablespoons pizza sauce or barbecue sauce
  • Salt and pepper to taste
  • Optional extras: jalapeños, pepperoni, spinach, or leftover chicken

Step-by-Step Method

Step 1: Prepare the Filling

Start by cooking your protein if it isn’t already prepared. Brown the ground beef or sausage in a skillet over medium heat, seasoning with salt and pepper. Add onions, peppers, and any vegetables you like, cooking until softened. Let the mixture cool slightly.

Step 2: Roll Out the Dough

On a lightly floured surface, roll your pizza dough into a large rectangle (about 10×14 inches). Make sure it’s even in thickness so it bakes uniformly.

Step 3: Add the Sauce

Spread a thin layer of your chosen sauce over the dough, leaving about a 1-inch border around the edges. This prevents the filling from spilling out when rolling.
