Ingredients You’ll Need

  • 4 chicken thighs or breasts (bone-in or boneless)
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon dried oregano or thyme
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 medium onion (sliced)
  • 1 cup chicken broth

  • Fresh parsley (for garnish)

Step-by-Step Method

1. Prepare the Chicken

Pat the chicken dry using paper towels. This helps the seasoning stick better and ensures a nice sear later.

In a small bowl, mix:

  • Smoked paprika
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper
  • Herbs

Rub this spice mixture evenly over the chicken, making sure every piece is well coated.


2. Sear for Flavor

Heat olive oil in a large skillet over medium-high heat.

Place the chicken in the pan and sear for about 4–5 minutes on each side until golden brown. You’re not fully cooking it yet—just building flavor and color.

Remove the chicken and set aside.


3. Build the Base

In the same pan, reduce heat slightly and add:

  • Sliced onions
  • Minced garlic

Sauté for about 3–4 minutes until the onions soften and become slightly caramelized. The leftover spices and oil in the pan will infuse the onions with flavor.
